This is by far the best little restaurant and bar we have ever been to! The decor inside to the adorable outdoor patio outside provided us an incredible dining experience. These chefs are talented in their profession and the bartender mixed the beer drink I’ve ever had! You pay a premium but the experience was well worth every bite of our amazing food and delicious drinks!

Amazing culinary experience.
The menu had wide range of options. Small plates were fantastic. You could tell every single item on the plate was well thought out and purposeful. The entrees were generous in portion and given the quality, very reasonably priced. The prime rib was better than any I've had at high end restaurants and far less expensive than at those high dollar restaurants. The wine selection was also quite nice and the staff are knowledgeable about the wine list and made solid recommendations. The atmosphere is nice, a little eccentric and definitely on the smaller side so make sure you have a reservation to get a table for this fantastic restaurant.

Finominal from start to finish. The Cream of Collard was the best soup we have had. I know it is a seasonal menu item but it was amazing. I enjoyed the Blackened Duck Heart and the bok choy that was incorporated. While I did not get it the Ricotta Gnocchi looked delicious and was very popular as we got the privilege of sitting at the chefs window and watched the cooks work their magic. I got the Braised Short Rib and was not disappointed, it was so tender and full of taste. Finished with the Cranberry Poundcake which was a great combination. On the drink front I had multiple
Ice Breakers. Bourbon smoked and broken open table side was a treat and very good. Service was attentive, music playing was very fitting. The mood of the place just really helped make it a memorable night. Sitting and watching the chefs in action was a real treat. If you are in Asheville for a weekend, make Jargon a stop for a meal.

Nice atmosphere but our food was so so. I got the fingerling potatoes, which were good, but nothing extraordinary. My husband got the duck confit croquettes which were better. The harissa sauce was delicious. The trout had large and somewhat flavorless chunks of potatoes and squash. His flounder was a smaller plate, but tastier. We also got the golden milk brulee (not pictured) which had good flavor, but the texture was off, slightly curdled. The grapefruit shrub cocktail was frankly the best part of the meal.

High end eating. Food was tasty, cocktails were great, smoked beets were the hit of the night. Interesting decor! Staff was cordial, I think everyone that works there said hi to us. Waiter offered some food suggestions that were all great.

The most enjoyable dining experience I ever had. Starting off, the hostess was very accommodating. We chose a romantic booth indoors. We ended up enjoying several small plates. We had 3 different cheeses. The blue cheese and brie with real honeycomb was a wonderful accompniment to our bottle of Shiraz recommended by our very attentive server Katelyn. The Mars Hill mushrooms was so incredible, we ordered two. Also loved the smashed fingerling potatoes. We finished with a yummy chocolate granache. The atmosphere and service is top notch here. A must visit in Asheville.

Reign was great. She gave us terrific service. The food was outstanding. Wonderful vegetarian items. Quaint local establishment. We sat at the chefs counter and watched them cook. It was fun. Not cheap but worth the money.

A beautiful space. Sat at the bar and the tender was very attentive. Cocktails on point. Meatballs, smashed fingerlings and the belly katsu was hitting!!! I think the rib eye sat too long it was cold when it came out to the point where the butter wouldn’t melt. Elote dish missed but I ate it anyway because IT’S CORN!

Sit at the chef’s table and watch the culinary magic happen. The space is warm, funky with vintage ambiance-it’s the perfect setting for an intimate date night. The service was exemplary & the executive chef kindly welcomed us & shared additional area dining recommendations. Check out the Local Kale Salad, Escargot and Curryworst Pappardelle and Colfax Creek Smoked Boston Butt - all incredible. Awesome craft cocktail & wine list with unique desserts too.

We are at Jargon for my birthday and it was fantastic! Be sure to make advanced reservations because they fill up fast in their intimate restaurant. If they have it I definitely recommend the fingerling potatoes, Mars hill mushrooms and the trout!

We sat outside in their gorgeous back patio that was converted from an warehouse, so the roof was a rolling screen. If you’re looking for a cute date night, this is the place for ambiance alone. However, food-wise it was only okay. The dishes looked and sounded great, but there were some odd creative choices like adding cold peach slices to the top of the pasta carbonara, which was very hot, so the peaches were lukewarm when eaten. It was pretty but unnecessary. My friends all had similar experiences with the dishes being overall good, but the odd additions/“twists” turned it into a “meh” experience.

Went for an early dinner to try this newer (at least to us) trendy place in west Asheville. Smaller indoor dining space with large outdoor space. Both were well decorated and had an appropriate ambiance. Everyone was very friendly and service was good. Had a kale salad and short rib. Very fresh salad and tasty. Short rib was good but not great. Also, very small portion. Git bread service and it was toasted but burnt. Would like to go back and try the pork shoulder, or a pasta plate. Mixed drink was tasty and had a lot of options.

Celebrated a birthday and spent a little extra to sit and view the chefs at work in the kitchen and it was so worth it! We had the braised short ribs and rib eye steak. They were both fantastic and loved watching them be made. The whole team works like cogs in a clock and they turn very well....like a team!

The drinks were good and the local greens salad was my favorite dish of the evening. The prime beef meatballs were fall apart tender, but the soba noodles were slightly over cooked. The beef tartare had potential, but the farro mixed into it made it not as cohesive and while the grated egg was interesting, it lacked the binding of a raw egg. The pickled veggies were delectable and the mushroom pate was reminiscent of hummus. The local greens salad dressing was bright, tangy, and contrasted well with the beets and goat cheese. The confit pheasant was the biggest disappointment because the leg meat was so dry it was like jerky. The sauce to go with it was a little heavy handed, but perhaps it was to help with the dryness of pheasant. The baby Shanghai bok choy was crunchy and cooked well. The short rib was another delicious part of the meal. It was tender and flavorful. Again, the veggies stood out the most to being well prepared. The ambiance of the restaurant is as superb and the staff were all friendly and attentive.

The menu can change daily as they source most of their menu locally. The food was delicious, cocktails were well balanced, and our server did a fantastic job of spacing our food (two of us shared a a snack, 3 smalls, and main) so we had the opportunity to savor each unique dish.

Holy Cow, Batman! This place was GOOD! Menus carry by season, but for our summer trip we had lamb tartar for the first time ever, crispy chicken feet, black butter vinaigrette on a salad, a prime ribeye, and a pork belly entree. Everything was beautiful, fresh, and flavorful. Drinks were also done perfectly and service was great with everyone working together. Jargon is near the top of my extensive lost of personal favorites, plus they really worked to take care of my wife's gluten sensitivity.

Absolutely delectable dinner! We ate at the Chef's Table, and you get to watch everything be prepared. I felt a little weird staring at the chefs as they prepared each meal, but it was cool to watch! They truly are food artists! Our server made great recommendations, and everything is super fresh! The "Eat a Peach" cocktail was amazing, and if you like whiskey, they have an insane drink that is a frozen ice sphere with smoked whiskey inside of it that they break open in front of you!

My partner and I had an amazing meal here while we were visiting Asheville. Every dish was better than the last, and the staff were friendly and attentive without being overbearing. The atmosphere was comfortable and welcoming. It was a wonderful dining experience that while decidedly premium, was not pretentious or overly formal. If you posses the means, it's a great place for a special meal.

This is an Asheville must! We had one of the best dining experiences in a long time! The food was consistently excellent. Tried several appetizers which were amazing. The trout was excellent, highly recommended. The brown butter financier cake is so good you will probably want a second one especially with the French press coffee! The service was outstanding, thank you very much Reign! Good selection of reasonably priced wines to pair and the cocktails are great as well.

Absolutely superb dining experience in every way - I would give it more than 5 stars if I could.
Our server was Reign, and she was perfect. Attentive, professional, and knowledgeable, and just made everything comfortable and enjoyable. She demonstrated how superb service doesn't have to be fussy.
And then the food. Prepared to be amazed. We chose to order a number of small plates so we could enjoy a variety of dishes. The Brussel Sprouts were simply incredible, and unlike any other preparation we've had. When one dish didn't quite hit right with my husband, Reign immediately found another for him that worked better. We didn't ask for it; she just knew how to ensure her customers had the best dining experience.
We've eaten in many wonderful restaurants around the world, and this was one of the top we've ever dined in. I don't readily give out effusive accolades, but Jargon is more than worthy.

I booked the courtyard. Unfortunately, when I arrived, we had been moved inside because of the cold. Because my date had specifically requested heated outdoor seating, I asked if we could move to the outdoor section (which they had closed). Within minutes, the manager and staff had set up a table with heaters and we had an amazing (and private) date on the patio. Amazing and gracious service. The food was delicious. I'll definitely be coming back and recommending Jargon.

So, we kind fell upon Jargon and so glad we did. As you enter you will be greeted by the owner of the restaurant (gives you the feeling that he really believes in his place).
Atmosphere of the restaurant is very unique with random mirrors on one side of the wall yet very fun also.
Menu has many options for gluten free, vegetarian and or meat options.
Staff is very knowledgeable. I ordered the bone marrow and steak tartar, and for dessert my friend and I ordered the gluten free carrot cake with duck fat buttercream. Which was to die for and was totally worth it. We would go back. Thank you so much for dinner.

There's a nice mix of vegetarian/vegan and meat dishes, if you have various diets in your party. Can't wait to go back!

The best restaurant in Asheville. The food is so incredibly amazing. The staff is friendly and helpful and the atmosphere is wonderful. We recently went for a friend's birthday and shared 4 small plates and three entrees. The group cheeks were to die for. The scallops and pork belly, tartar, tuna crudo, trout, everything was perfect. I will be returning again very soon.

10/10 experience. Friendly staff, cozy ambiance and absolutely incredible food. As a vegan I am usually pretty limited to the same foods when going out to non vegan restaurants, but they had a very unique selection and I tried every single one. Highly recommend. Also the bartender made me the best dirty martini I’ve ever had.

I may have had a better meal but I sure can’t remember when. Tremendous experience from the moment we walked in until we left. Service was impeccable (Rain) and the meal she helped us put together was outstanding in every way. Asheville has a ton of great restaurants. They’re all fighting for second place.

This place is one of the best in Asheville. Might be my favorite so far. My husband's cocktail was delicious. The wine list is one of the best I've seen anywhere. What restaurant has super smooth Burgundy Chardonnay by the glass?!? This one. And, I love that they offer three oz pours so I can travel from bubbles to red as I eat. We ate a lot. Too much for me to list. Standouts for me were the crispy fingerling potatoes with the whipped chive sour cream, potato and stinging nettle soup, the rye "spaghetti", this crazy mixed mushroom dish with Lions Mane and other mixed mushrooms, and rainbow trout with black lentils. I have saved my criticism for last. I didn't like either of our desserts. We had the pot de creme and financiers cake. They were disappointing to me and I didn't like that they flattened the finish to a great meal. So I'm just going to forget about them. Everything else was so amazing and the desserts might be something someone else would enjoy. I will 100% be back here to eat.

Local gastro pub with a seasonal menu. Only seats about 25, so you'll want to reserve well in advance. The ribeye I had was phenomenal, probably in my top 4 for steaks. My dining partners all enjoyed their meals as well, and the do have vegetarian selections on the menu. We also had a cheese platter as a starter, and let our server choose the cheeses and spreads for us, and it was excellent as well.

Eclectic Mediterranean dining and a unique experience. Delicious Moroccan chickpeas, roasted beets and charcuterie. The drinks were good and the the vinyl spinning was great (thanks for spinning Miles Davis' "Birth of the Cool" side 1).

We received an unsolicited recommendation for Jargon from our stewardesses on the flight to Asheville (AA). As we could make last minute reservations for this restaurant we walked in after 8 pm and hoped for the best. we were seated at the bar, which was a fantastic experience. We had a wonderful conversation with Andrew, the amazing mixologist, who shared with us a trick or two about his creative cocktails but also made great recommendations for different dishes. The cocktails were fabulous and unique, the food was excellent and the ambiance was enjoyable.
We had a wonderful night and we will definitely return

I’ve been to Jargon three times now. Tough to explain why exactly, but I kept coming back thinking that I might find what I had been missing the previous time. The dining room is small, intimate, lively. The drink menu is exciting and varied. To their credit, it is a creative menu. However, the food itself seems to be extremely inconsistent. The blackened carrots were the star of the first meal I had there (super flavorful, colorful little carrots with great accompaniments) and they were practically raw and flavorless the last time we were there. We’ve had good food and also truly unremarkable food. Spaghetti alla chittara infused with coffee and served with roasted duck was under-salted to the point of being indistinguishable from buttered noodles. I wouldn’t spend your money here given how many other good options there are in the city.

We booked a table for our anniversary dinner. I got the ribeye and my husband chose the trout. They were both phenomenal! We split the bread pudding and coconut chai brulee, and again were not disappointed. I was not super crazy about the cocktail I chose, but it was excellently made. They pay a lot of attention to detail and both our server and the host were extremely kind.

What an absolutely incredible meal. We started with cocktails, Brussels Sprouts, and Steak Tartare. We then moved on to the Duck and Short Ribs. Everything from the drinks to the last bites of our meals were outstanding. The service was fantastic as well. Be advised that the menu is a bit pricey but it is absolutely worth the price. Some reviews describe the place as romantic, I'm not sure I'd agree with that summation, however, it was a great experience nonetheless. Really loved that the tables were made from recycled bowling alley lanes, that was pretty cool.

We have been going to Jargon for a number of years while visiting the area. This year, it was a little different. The server was Amazing! She was lovely, quirky in the best way and made the experience better! The cocktails have always tasted like craft cocktails to me, but this time it tasted like something I would make at home lol. Not impressed and didn’t even finish mine actually. My husband’s duck was fantastic. My dishes were ok. It was our anniversary and she was sweet enough to offer champagne at the start of our meal. We aren’t huge champagne lovers, so we declined. We did order a dessert (ganache), which was very good. Thought maybe they would comp that for our anniversary, but didn’t, which is fine, but…..anyway, I was disappointed with the experience. We have always boasted this restaurant to friends visiting and I just can’t do that at this point. Get someone back behind the bar that sees drink making as an art☺️. The drinks set the stage and at that price, they should be amazing. Thank you!!

The food here is so good and elegant I felt like it was a really nice atmosphere. I tried one of the new desserts they had on the list and they asked for my feed back which was super nice. I tried the steak plate and the pork belly plate while I was here and let me tell ya AMAZING! I sat on the patio which they have covered and they also have heaters out there which is super cute. Needless to say I enjoyed it.

Talk about a gem!!! The attention to details that chef has taken is spectacular. The food was incredible and the pairings are done perfectly. One of our FAVORITE restaurants anywhere! Celebrated a birthday dinner at Jargon last evening outdoors in the heated courtyard, illuminated with light and warmth. It was a magical atmosphere, particularly in late October. The atmosphere was welcoming and perfect for a celebration, but the food was even more extraordinary. Everything from the appetizer crispy brussel sprouts to the locally foraged mushrooms oozed with flavor and mastery of spice. The squash small plate was warming and flavorful. The Sunburst Farms Roasted Whole Trout and the Lavender Honey Flavored duck were shared by the four of us and delighted us in their perfect preparation. Topped off with the chocolate ganache dessert and a green chartreus after dinner drink. SErvice was attentive and professional and much appreciated in these times. Will be back!

Creative-on-steroids kind of a place.
Walking in with some Eartha Kitt vinyl spinning definitely set the mood in the intimate setting.
Mushrooms great... then some miso foam and mushroom cracklings...mushrooms fantastic.
Brussel sprouts great...then some glaze and paper-thin dried tuna flakes waving (literally waving) on top... brussel sprouts fantastic and fun to watch.
Pork belly great...then dollops of two different sweet potatoes and a caramelized-esque apple...pork belly fantastic.
Beef meatballs had a flavorful red sauce. As with all the dishes, I scraped up every bit of sauce I could.
The chocolate ganache dessert-not quite as firm as a torte, not as soft as a panna cotta or mousse-was topped with malt crumbles and brownie bites. The mouth-feel contrasting the creamy and crunchy was delicious and not overwhelmingly chocolatey.
The bread pudding had five-spice cream, nut clusters, slightly salty soft apple slices. Crunchy, soft, sweet, salty, savory, creamy, familiar, and exotic all rolled into one satisfying bite. Sounds like a crazy mishmash, but perfectly balanced.
Even if these particular offerings are not on the menu, I would trust whatever is being served. The chef understands flavor and isn't afraid to stretch your preconceived palate while keeping the dishes very approachable.
From the host greeting us to the server (Reign took great care of us), everyone was welcoming, friendly and efficient. Plates were checked and imperfections wiped away before serving. Wine glasses were inspected for smudges. The pacing of the food is not too fast nor too slow. I watched these people work hard to make it seamless and appear effortless.
Jargon pays attention to details culminating in an enjoyable eating experience. Makes me sad I'm not a local to experience more divine alchemy.

Jargon is second to none in Asheville. Easily one of the best restaurants I have ever been to. With a local and seasonal menu the food changes constantly. The best mark for Jargon is that no matter what season and what's on the menu you'll end up a winner. If you're in Asheville and you haven't tried Jargon you should. Thomas is a gem too, wishing everyone here the best yall rock!

I wish I was a social media queen and had taken photos, but even photos can’t describe how amazing the food was. We were visiting from out of town and needed a casual dining spot for a larger party. The restaurant was really nice to accommodate us, setting up a beautiful table in their covered patio area. It was chilly, but they had enough heat lamps to keep us very warm. We tried almost every cocktail on the list. They were well balanced, not overpowering and weren't swallowed in syrups or sugars. We ordered the vegetarian appetizers- the mushroom dish was incredible as were the brussels sprouts and fingerling potatoes. Their Nutella ganache was so rich we shared it with the entire table. In terms of portion sizes, I’d recommend sharing dishes since they’re pretty generous in servings. The entire experience, including the waitstaff was phenomenal. Not one complaint. What a nice welcome from Asheville on our first day.

Ate here for dinner. This place has beautiful ambiance. We had the margarita, the fried chicken beignet, the meatballs, and the tagliatelle. Everything was great, the pasta was very salty though, likely from the mushrooms, but other than that, great experience. Wonderful staff.

My Wife and I came to Asheville for some adventure and away time. Jargon was an amazing adventure! Sean, the owner welcomed us and made us feel like family.
The service and the food were outstanding! We decided to just sample small plates and left happy and truly satisfied. We can not wait to come back and explore more of the menu.

Amazing experience. Food was exceptional, we had the deep fried deviled eggs as an appetizer. Sounds a little weird, but it doesnt taste weird at all! My wife had the strawberry salad and enjoyed it. I had a scallops and pork belly plate, which was the perfect balance of sweet and salty meats. We had a lavender creme brulee for dessert that was also great!

The service was fantastic. The greeter/hostess was even excellent. Eric was our server and he was attentive but gave us enough time and space that we never felt rushed and he paced the meal out nicely. Bartender came up with a great mocktail for me. The food was very unique and and had great presentation. It was a nice enjoyable environment and overall experience. I am only giving 4 stars because the food was so unique that it seemed to lack all familiarity. The fried okra on the pork belly/scallops were thin strips so the texture was not great, the cauliflower grits underneath were good, but I kept wishing I had just a little something else to them, the scallops didnt have a lot of flavor, the pork belly was good but most if the flavor was in the sorghum glaze and I wished it had even more of it. My husband ordered the delmonico and he enjoyed it and said the salt/seasoning was just right on it. The potatoes underneath needed just a little something more though. Everything just seemed one flavor off or one flavor missing, still good food, but just could use a tweak or two to make it just right.

My wife and I visited Asheville for our anniversary and wanted to try Jargon after seeing the reviews. The dishes are designed to be shared, so come ready to enjoy several courses of the best food of your life.
We sat at the “chef’s table” and were treated to a show. Chef Jeff and chef Marcus were wonderful company for our meal and Daniel, our server, made sure we were well taken care of. They answered all our questions and honestly made the experience unforgettable. We highly recommend the strawberry salad, spatzle, and bison strip loin. And make sure you save some room for the cornbread pudding for dessert.

We visited Jargon for my birthday and the experience was nothing less than perfect. The brussel sprouts were amazing! I ordered the ricotta gnocchi and my husband enjoyed his braise short ribs (and the other half of the gnocchi that I was too full to finish). We plan to come back the next time we visit Asheville.

I'm not sure what was better, the charm of the place or the food! This small mid century- meets vintage chic restaurant has it all. Beginning to watch everything being made while listening to a record put on by the hostess and looking over their great drink menu, we already didn't want to leave. By chance, we got to sit at the "chef's table" which is a piece of the bar that overlooks literally into the chef's work station. With it being tapas inspired food, this will make you want everything! The fried deviled eggs are a must! Chef Preston was so personable and made us feel like we were sitting in his own kitchen. Our two waitresses were amazing at explaining the ever changing menu and giving us phenomenal recommendations. Everything we ordered was great! Even down to the homemade root beer and ice cream for our dessert. I would recommend this ten times over. I'm glad we found it when we did!

Right off the bat, the decor makes you feel a little cozy and a little artsy at the same time. We had reservations and were sat quickly. Our waiter was enjoyable, and gave us some tips for how to order. For drinks, I got the Darth and Stormy a solid choice, the fevertree gingerbeer is one of my favorites. My boyfriend had Grand Dad's Lunchbox, it had a very strong peanut flavor that overpowered the cocktail, not our favorite.
We started with calamari fra diavolo, the marinara had a hint of smoke in it that went really well with the spice from the crushed red pepper and the calamari was tender, not chewy. We then shared the elk meatballs. We wanted to try elk and felt like this was a good entry. It was juicy and a little wild tasting, the burrata was a good topping and I found myself wanting to eat it all. Lastly we had the octopus and I'm bummed I didn't get a picture. It was our favorite dish. An octopus tentacle in a bowl of sherry butter sauce with chorizo and fingerling potatoes.
All in all, I definitely reccomend this place and would go back to try a few more items. Dont miss the little cucumber with beet mousse appetizer they bring you. It's so good.

Visiting from out of state and dined here last night on a whim. Overall it was a good experience. I love it when a server really knows the menu and can offer up suggestions. That was our server last night. (I really wish I could remember her name because she was great!) When we asked questions about the menu, she followed them up with questions about us. Her recommendations were based on what we like and not what she likes, and we weren't disappointed. From the cocktails, to the starter, to the main course everything was very good. Our teenage daughter didn't really care for her meal. She's usually very good in trying new food experiences, but last night was a "swing and a miss" for her. 😁

While the service was great, the cocktails were lacking and the "Whole Sunburst Trout" was woefully Over-cooked and severely under-seasoned. I love this place! We were visiting friends who live in the area from out of town and they hadn't tried it yet so we decided to come here for dinner. Jargon sets the bar. Its menu and atmosphere are lavish, sophisticated and playful. The icebreaker (a play on a Manhattan but reminiscent of the 90s Milton Bradley game) is delicious and nothing disappointed. Calamari di friavalo and the Paella were loaded with flavor. The Smores creme brule was the best we've ever had. The cardamom ice cream left us cursing in delight. Please go! Our resy reservations were lost but the hostess was very kind and helpful and we were able to get a seat at the bar as we had planned. The bartenders were busy but very helpful and attentive and friendly. The craft cocktails were clever and tasty and the food was fantastic. I had heard that Jargon is a top 3 restaurant in the Asheville area. So, we pop a call to Uber and of we go about 10 minutes from downtown.
In the pouring rain, we were seated in the courtyard, which is covered by a retractable roof. We were lucky to get this reservation because they were sold out days in advance with only a single 5:30 reservation available. The courtyard is quaint and the pouring rain takes it to a whole other level.
The service is impeccable and our waitress is all over it, giving as much privacy as attention.
The menu had a couple of brand new items as well as the consistent best sellers. Two things about the menus that I really liked: 1.) The food menu has suggested wine pairings for each item. 2.) There are small and large sections to choose from so you can sample tastings similar to tapas.
Also, the wine menu is extensive with worldly options and a treat for any oenofile.
We chose the local farm salad, the corn etolfe and Amber Jack with hummus and roasted fresh cherry tomatoes.
The chef, Ryan Kline, is an artist!!
Out of the gate the freshness charges at you like a hurling stallion. Using local fresh farm ingredients shines through. But this artist takes it to a whole new level.
I love the bits of grapefruit and shaved fennel bulb in the garden salad. And, the lightest touch of vinaigrette...Not overpowering, but rather, complementing the overall flavor of the fresh greens. There was a crunchy quinoa that left me searching for more. Yeah, the salad is a big winner.
Next up, the fresh corn on the cob, fire roasted to perfection. I can't say enough about this dish. It's called "Summer Corn Elites". It comes out black and messy but well worth the adventurous challenge. Apparently the corn starts turning black with a Shilajit like substance that has far reaching health benefits. Coveted by South American indigenous natives, we're just learning about this agricultural treasure. In any case, it's delicious and fun to enjoy.
The oil poached Amber Jack is new to the menu and a real keeper. The eggplant hummus had me begging for more and the piripiri place a gentle kiss of heat on the throat and a bouquet of flavors on the palate. Adding the roasted cherry tomatoes places just the right amount of acid to the dish and balance on the palate. The chef suggests pairing this dish with a burgundy Chardonnay, however, a Montrachet would also compliment this dish.
Overall, Asheville is blessed to have this restaurant and it's clearly the number one choice of fine dining in the area. Book this place FIRST, all others can wait!

We had an amazing time at Jargon. We went to celebrate our second wedding anniversary and Jay was so good to us. We could tell that he was super busy but he still made us feel special and attended to. He brought me a complementary glass of Prosecco when we told him what we were there to celebrate. My husband and I both agreed that the pork belly was the best that we had ever had. The menu changes daily so if you see pork belly when you go in, get it. Chef Ryan Kline has been a star making an impact all around Asheville with his cuisine and it was great to see him shining again here. We absolutely will be back!

We had an outstanding dinner at Jargon last night. After a foodie weekend in Asheville that included Chai Pani, Cucina24 and Curate, Jargon was the last and best experience of the trip. We chose the chef's counter for our meal, which turned out to be a really smart choice as we enjoyed watching the team work for much of the evening. The cocktails were outstanding. My wife had a wonderful gin cocktail with peach dominant flavors. I ordered a bourbon cocktail that was served inside a spherical ice cube. The server used a small hammer to break the cube and release the drink (fabulous). We continued with a range of great choices for food, included a wild mushroom mix that was really flavorful in a garlic and miso emulsion. The pappardelle was fantastic and also had chunks of peach for an added sweetness. The chef had just added a snapper entree with two different sauces and that too was pretty special.
The service was very attentive for the most part. Our server vanished for a bit toward the end of the meal, but frankly we were so entranced by watching how the magic happens inside the kitchen that we hardly noticed.
All in all, a spectacular meal that stood out against very tough competition in a foodie town.

This restaurant is clean and beautifully decorated. Everywhere you look, there’s something new to admire. Our server was friendly, attentive, and prompt with our order. We thought it was so interesting to be able to see the cooks working through the window and they worked so flawlessly together. The bartender was also fascinating to watch as he made many drinks simultaneously and swiftly. Our food came out and every dish we ordered literally melted in our mouth. The flavors intertwined so well and each bite was delectable. From drinks to dessert, we thoroughly enjoyed every moment in the restaurant and would highly recommend this restaurant to anyone. We hope to be able to visit again next time we are in town.

I'd like to preface that I was SO excited to try this place that we were considering it for our wedding ceremony upon initial web searches.
Pros: Beautiful atmosphere, great service, tasty and strong drinks..
But the food was not worth the price, and I wouldn't order it again. My partner had the ribeye, it was a bit gristly at $50. Vegan mushroom appetizer and Moroccan tagine was lacking any deep flavor or real complexity. The best part of the tagine was the preserved lemons, which were sparse. The dessert was actually the reason we went here (orange dreamsicle creme brulee), which I had forgotten about after the meal and I regret ordering it. It was burnt and left a bad taste in my mouth.
You go out to have food better than at home, and I could certainly make it better. There are plenty of other restaurants in the area worth trying, vegan options or otherwise.

We took our time scouting locations for our 10 year anniversary, and decided on Jargon. The entry was pleasant and warm. The hostess was graceful and welcoming. We enjoyed our outdoor seating preference. The tunes were perfect, serendipitous, there was classic Cuban music playing at the time, which was the soundtrack to my childhood. I took my better half to the motherland when the embargo was lifted, and we shared a very special experience. This generated the tone for the evening. Thereafter, we met our Server, Ethan, whom clearly appreciated his workplace. He navigated us throughout the experience. We felt safe in his arms. The food was special. Every dish we ordered was well balanced and thoughtful. The cocktails were creative, along with the wine list. We were very impressed with the sweet-wine offerings, and sipped a few at the end of the meal. It was a pleasure to meet, Sean, the conductor. We very much appreciated the time of all those involved in this operation, and look forward to the continued relationship.

This place is slightly off the beaten downtown path but is a slept-on GEM. We had a few places in mind to eat at before we landed on Jargon, but the reservation gods had other ideas.
Our dinner was enjoyed in the courtyard area. When being seated, we got to see the lovely design of the inside before taking our seats at a cozy table warmed by a fire.
Our server was friendly and informative from start to finish. We enjoyed a nice Barolo, a stellar whiskey cocktail, a halibut dish with perfectly crisped skin, and a braised short rib that was so good it made our eyes roll into the backs of our heads. After dinner we had french press coffee that was beautifully presented Don’t believe reviews saying this place is anything less than STELLAR! Jargon gave us a perfect date night.
* Honorable mention: The owner brought our first round of drinks out and briefly spoke with us. Having both worked in the restaurant industry in the past, we were charmed by how amicable he was and the pride he has in his establishment and the customer experience.

High quality culinary experience..group of six, we tried all the things. I loved the scallop and pork belly..I wish they gave 3 scallops instead of 2, it was just a bit short. Friend commented that the short ribs were tasty, the polenta was super good but the meat cut is on the fatty side, I would have served it slightly shredded to avoid the clump of fat. The drinks were great but be expected to pay for the fanfare. Roasted brussel sprouts were good, just needed something, perhaps a bit beef or ham, plus a tad more of the puree. The coffee service was amazing and the mouse was really good. A few had the duck and I think while tasty, would have preferred another cooking method, it was sort of like a fried chicken leg.

Overall we had a good dinner experience at Jargon. The venue is cozy and nicely decorated. We had to wait a good while sitting at the table before we could order and another good while before the wine arrived. The wine was very good though, and after that the waits were not an issue anymore. The starters were fantastic (the kale salad and beef heart tartare were the absolute best things we ate in three nights in Asheville) but the mains were a bit underwhelming to me (not bad, just not so special). Dessert wasn't great but the cocktail I had with it was very good.
I do think Jargon is a good restaurant but personally I expected a tad more (maybe that's the problem!)

We visited Jargon in West Asheville again, this time at one of its "Mardi Gras menu" nights.
The restaurant is always interesting, the staff is great (especially Maria, our server), drinks are amazing and we had a very enjoyable evening in the downstairs heated patio.
However, having lived in New Orleans for some years, I was disappointed in their approach to Creole cuisine.
Take for example the rabbit and andouille gumbo. The roux was dark and delicious, yes, but for me the gumbo was ruined by mating it with a blob of "crab tater salad" instead of the usual rice and French bread, and the soggy pork rinds on top didn't help. We did like the fried oysters starter, with a corn meal breading.
Of course the drinks were wonderful. The Vieux Carré ($16) was probably the best we've ever had, smooth and with sophisticated flavors, and the famous "Ice Breaker" is always fun.
The jazz trio was very loud but good, especially the energetic keyboard player.
I guess the four shared small plates/appetizers, two cocktails, one beer and a shared king cake dessert ($12, shipped from a commercial bakery in NOLA) was worth $160, but for New Orleans food I'd rather be at Galatoire's or Casamento's.

My husband and I celebrated a wedding anniversary at Jargon and had a fantastic time! The owner gave us complimentary champagne. The food was incredible and fresh. We had pork belly/scallops and flank steak. The cocktails were delicious and the service was exceptional! Would highly recommend for a nice dinner in Asheville!

Wow. Came straight from Charlotte and looked online for a restaurant for dinner. Jargon came up and we decided to give it a try. I had the trout. Not something I would usually order. No regrets -it was the best fish dinner I have ever had. The chef had the skin super crispy and the meat perfectly cooked. The creamy sauce was to die for. Only comment to the chef is that I wish the rapini was cut for me so I could eat it without having to work on it. My wife had the pork belly and scallops. She is still raving about it today. She took the lemon blueberry dessert home and that was really good. Good romantic ambience. Great for date night! Overall an excellent experience!

My husband and I were visiting Asheville for the week and decided to try out Jargon on our first night here. Needless to say, we returned on our last night as well. We were able to get reservations for both nights on the day of. The service was exceptional on both occasions and the servers took their time to answer questions, provide us with suggestions, and took their time to get to know a little about us. The food was unbelievable- great quality, good portions and so much depth to every bite. The food was so good that I really felt immersed with every bite and wanted to take my time and savor it. On our last day there, the owner took the time to come to our table to introduce himself, ask about our experience, and thank us for our business. We had a wonderful experience and would definitely recommend it.

The cocktails were great, the tomato tartine was delicious.. However, i also ordered the gnocchi and it was really really dry and very dense... Seemed over cooked and I've never had gnocchi that didn't have some type of sauce to accompany it. I'd still be willing to try this place again because the service was great and the other parts of our meal were very good... Just disappointing that the entree was expensive to be so underwhelming.

Easily one of the best meals I've eaten in recent memory. The pork belly in particular was perfectly cooked and balanced with its sides, but honestly there was nothing that wasn't exceptional. On top of that the staff are super kind, friendly, and accommodating. Will definitely be coming back!

One of the best meals I’ve had - 10/10. Everything was actually perfect - food, service, atmosphere. The owner, an incredibly nice person, greeted us and checked on us throughout the meal. Our server was helpful in providing great recommendations and was very kind. I highly recommend the Watusi meatballs, the Bluefin Tuna (if avail), and the steak (superb)! Easily, one of my top 5 favorite restaurants. It’s rare to find a place where everything is 100%. Kudos, Jargon.

We read so many 5 star reviews that my husband and I couldn’t wait to try it. We ordered the frisée salad and house salad. My salad $14, came to the table devoid of dressing! My husband said he didn’t see any on his either, cost $13. We called the waiter over and he said the dressing is subtle, so I shoved it over to him and said “this is dry lettuce”. He did a double take and went to the kitchen to have someone bring Us some. Also, my salad had almost no ingredients. It was supposed to have pears but two tiny slivers of grapefruit and two tiny pieces of what appeared to be baby beets, were the only garnishes other than some sunflower seeds and a piece of soft cheese which was very good.I have eaten in many high end restaurants and the 5 stars this restaurant receives is puzzling to me.
We asked for bread and for $4 we had three small pieces with one being the end piece. It was a good baguette, however.
The short ribs were very good but I wasn’t sure if they were short ribs because they are usually served with the bone attached. This was more like a braised roast. The gravy was delicious, however, and

I live in town, and always wanted to try their quirky menu. I just got back from a nursing deployment, and wanted a fun place to relax. Atmosphere, and service were great. It’s a good place to eat if you like weird unique things. We had a monkfish appetizer (it was ok, probably wouldn’t recommend) The Gnocci was great, the pumpkin marg, French press coffee, pheasant leg etc. all wonderful.

We were lucky enough to get seated at the "chef's window" with a front row seat looking into the kitchen. The food was excellent - pork belly & scallops and the pasta dish. All of the dishes were well thought out and well prepared. My wife and I travel quite a bit, and we are always proud of our ability to sort out all of the many choices in various cities. Our dinner tasted good. However, I ordered Cornish hen and the portion I received was ridiculously small. I received half of a "small" Cornish hen. There could not have been 2 ounces of chicken for my meal. I have never ordered Cornish hen and received a half of the hen. The price was $29. I left the restaurant hungry and unsatisfied.

Fabulous Mardis Gras dinner! My husband and I absolutely loved the offerings on this special menu. We started with the green salad and gumbo and we shared. Perfect start. I especially liked the dollop of potato salad in the gumbo. The creaminess was wonderful against the zip of the andouille. Hubby had etouffee for dinner although I won with the lobster. We brought panda cotta dessert home and wow it was excellent when we finally dived in. Thanks Jargon!

This place is a quiet slice of heaven tucked into bustling Haywood Road. The service, beginning with the genuine and sweet hostess, to our server, Steve, and wonderful Melissa overseeing everything— Each and every moment was a delight. The food is incredible! Do not miss the crispy b. sprouts to start. We had the cherry ice cream AND strawberry balsamic chocolate torte to finish out and could not stop smiling at the flavors! This was one of the best restaurants we ate at in Asheville and we tried some of the best rated restaurants here! I definitely suggest sitting at the “chef’s bar” if it’s just two diners. You get to watch the chefs prepare the meals (and really helps with choosing what you want too). Pork Belly and Scallops were some of the best we’ve had, period. Highly suggest this restaurant. Staff was awesome too.

From the moment we walked in and were greeted by the owner and thanked for joining them and supporting them, this was truly a dining experience of a different caliber. The atmosphere is warm and eclectic. We were seated in a banquette that had a view of the bar and the rest of the restaurant, which also provided nice people watching! Our server was very knowledgeable about the menu and drinks, recommending cocktails and wines. We went with a couple of smaller plates and one entree to share. The beef tatare with mushroom and walnut pate was killer. The rice crackers were light and the pickled veggies a great complement. Bok choy with cashews and an Asian influenced sauce was excellent as well, although you have to enjoy an intense and somewhat salty sauce, which I do. Pork congee dish was our entree, and the pork was smoky and crispy which contrasted well with the congee and egg. If you are looking for a personal, high end, dining experience in Asheville, look no further. So good I forgot to take any pictures. Next time!

4 stars only because it wasn't perfect! The drinks were divine, the menu interesting and delicious. I ordered my salmon medium and it came rare. They fixed it and were gracious about it. The server tried too hard but was sweet and accommodating. I think it'll be one of my new favorite spots if the prices don't inflate and the portions don't get any smaller.
Top notch decor, lighting, vibe, design. Love the ambiance and theme the owner produced... 20s era meets movie set meets hipster fun. Great music (jazz that you can follow) and feel to the place.

Still, AK, the host, was extremely friendly and seated us in the best table, that had just vacated. The restaurant ambience is very welcoming.
Ethan, our server, was outstanding. His recommendations were perfect, as were his wine pairing suggestions.
The food - smoked trout appetizer, pulled pork and cornish hen entrees and juneberry pannacotta dessert were all unique blends of flavors.

It's been awhile since we've been (September 2020) but the thought of this place is still brought up in conversation with my wife and I... so much so we plan to travel from out of town this summer in large part to ensure we dine here for my birthday. The food was delicious and one of the most memorable meals we've ever had. The owner was extremely hospitable, but not overbearing; you can tell he cared a lot. The effort put into execution truly shines, I'd recommend to any foodie stopping through Asheville!

This place has an amazing chef. A gem. One of those places you know exist but you can never really find.
Everything, and I mean everything, we had was OMG. Fusion of flavors, perfect execution, perfect presentation. With no reservation we sat at the bar and observed the bar tender. True professional as well. The Icebreaker is not just the best Old Fashioned you had it is also a cute presentation. On point mixed.
Fired okra was perfect cooked with new exciting flavors. The stew was reinvented and while that mostly fails, it worked here. The Rib Eye had been smoked to perfection with cooking it on-point served easy on the eye and the flavors were to die for. If there is room...the deserts (I typically skip those) has=d to be tried. Rice Pudding it was and in 50-years fo rice pudding being one of my fav things I found you can elevate this poor mans dish to VIP levels. Would be worth going there just for that.
And then there is the whole atmosphere. It is homey and modern and functioning and just makes you feel welcome all rolled into one.
They require mask wearing (11/2021) and I applaud them for it.
This place is a gem. If you are in Ashville this is THE place you have to put on your reservations required list. You cannot be disappointed. Yes it is more expensive than Burger King and it is worth EVERY Penny !

Hands down the best meal and restaurant experience we’ve had in a very long time. We got two appetizers (tomato tartine and lamb meatballs — both a must), a ribeye and the trout, and each one was extremely unique in flavor and cooked to perfection. Owner was incredibly nice with great recommendations. Extremely nice restaurant but felt cozy and down to earth. We will definitely be back next time we visit Asheville!

We were totally blown away by the unique and fantastic flavors as well as the attention to detail, excellence and superior customer service. We arrived strangers and left feeling part of a close-knit family. We also vowed to visit anytime we are in the area. Fast forward to this evening for another marvelous meal and exceptional evening! Truly another 5+ star experience! Well worth the drive from Charlotte (or anywhere) but definitely best when staying in the area so you can linger and fully appreciate the atmosphere, the drinks, the fabulous food and phenomenal people who are the heart and soul of Jargon. Cool place in West Asheville. Fairly small, so get reservations. We sat at the bar, which was a good spot for sampling some of their delicious drinks.
We started off splitting a mixed greens salad. Super fresh, great dressing, & my wife ate the thinly sliced beets (I hate those!).
For dinner, I had the short ribs, which were served on polenta with a wonderful sauce. My wife had the gnocchi, which I actually liked better.....but, we asked for some extra sauce from my dish & dipped the gnocchi in it. That was pretty perfect!
Bottom line.....both dishes were great & service was spot on. Looking forward to a return trip.

We were searching for a great place to ear for a upcoming birthday trip to Asheville. Trip Advisor listed Jargon as the #1 restaurant so I made a courtyard reservation (so happy I did - the courtyard was great!). From the moment we entered the restaurant and until we left, we were treated as royalty. Every single staff member was friendly and accommodating. Our server, Eric, asked all the right questions and truly cared about our experience. Melissa checked on us (just the right amount of times) to make sure we were comfortable while we ate and drank. The food was INCREDIBLE - we had the roasted brussel sprouts as a starter and the duck and trout as the main - wow!! We had the key lime pie for dessert - amazing!! The cocktails were the best I've had in a long time. I can not wait to return to Asheville so I can eat here again - highly recommend! I'm super happy we made a reservation.

Oh my goodness, this place is fabulous! It’s not downtown, but don’t let that stop you. We ordered 4 plates (3 small and 1 main) for 3 of us. We had the tomato tartine, the meatballs, ricotta gnocchi, and the smoked cornish game hen. We topped it off with the caramelized banana galette for dessert. Great server (thank you, Reign), and warm host, Sean.

Not every dish hit a home run for me though.
Out of the 4 I ordered, the Duck confit, and the Lion’s Mane excelled. Both dishes exploded with flavor, and were on the money on the texture front.
However, The Bone Marrow serving was stingy and it’s compliments werent so diverse. It needed something- like a sweet onion jam, perhaps?.....The Grouper Cheeks were overpriced and not all that impressive. Quite bland actually. The dipping sauce was just ok.
Wine selection selection was top notch. I also like that they offer 3oz pours.
I would certainly recommend going here while in Asheville. Dance around the menu and have fun!

Best in all of Asheville! We were early and the hostess was more than accommodating! We felt welcomed as she made our table ready. The drinks were highly creative. The Ice Breaker is a must try! I had the Cat's Pajamas which was delicious and pretty! Great selections of all varieties. We had the Meatballs and Spaetzle! Perfectly cooked and the mushrooms in the Spaetzle were delicious! I could have eaten all starters for dinner! We also enjoyed Gumbo Ya Ya and Pork Belly and Scallop. The variety of flavors were spot on. The depth of the Gumbo was rich and full of flavor. The different textures in the pork and scallop with Kim chee was outstanding! Winners hands down the best food we've ever had in Asheville. We've now found our destination Asheville go to forever restaurant! Dessert was beyond imagination the blood orange sorbet was perfect but the Croissant Strata, don't be fooled, you must try this! It was another level of creativity and deliciousness! Just plain WOW! The owner greeted us warmly and was genuinely happy to have so many people enjoying his restaurant. Outside was a taste of Europe with the seating. We will never go to Asheville without dining at Jargon! Absolute perfection. Well done from the front door, to the bar, our waiter, kitchen, everyone was working together to make it exceptional. Applause to you!

Jargon is our favorite restaurant in all of Asheville! My husband and I have lived here for 4 years and rarely have we seen such passion in a restaurant owner as we've seen in Sean. He remembered our name after we'd only come one time, and has made us feel so welcome every time we've come back! The food is outstanding, I've never had the same thing twice (except the Elk meatballs, every time cause, duh), and the cocktail menu is ever-changing and always delightful. The space is gorgeous and it's obvious so much love and attention to detail went into the design and remodeling of the building. Seriously, just go and see for yourself, you won't be disappointed!

Prime NY Strip was probably one of the best steaks I've ever had. Got it medium + and it came out more like medium-, but wow was the flavor and quality outstanding!
Pretty much everything else we got was good. I would only suggest to the owners to add roasted cauliflower to compliment their delicious brussel sprouts, and to add a flourless chocolate cake w/ hazelnuts. Their existing chocolate mousse tasted good, but I'm not a huge fan of mousse. I think the flourless chocolate cake with hazelnuts would be far superior for a chocolate dessert.

Thomas was the best server we have ever had, even the chefs in the kitchen were especially kind for my little aspiring chef! We will be at Jargon EVERY time we come to Asheville.

The ambience is great, but the menu selection is a little disappointing. Everything we tried was really good. The wait staff was really friendly, but almost too attentive. If you are looking for something new, definitely check this place out.
Why is the menu disappointing?
They tried to start as a tapas place but the waiter said they got a lot of negative feedback so they added more larger plates at the expense of the tapas selection. The problem now is that there aren't enough tapas on the menu to really go that way and there aren't as many large plates as a normal restaurant. They should pick a side and stick to it. We found ourselves struggling to pick small plates that we wanted after about 3.

My friends and I met here for dinner and had some delicious dishes and cocktails. We got the special sangria they had that night. Service was perfect, and we didn't feel rushed at all. The best dinner we have had in recent months. We went to jargon on Friday. This was an afterthought so we ended up sitting at the bar. The experience was near perfect. Our bartender worked like a personal assistant to our meal. From the hush puppies to the gumbo to the buffalo meatballs, everything had an original flavor. The presentation was perfect. Make sure you sample a drink special. Like the food these are original blends of unusual flavors. The only knock I will give them is our main course was rushed just behind the first course. The waiter didn't seem to think rushing to put our main on the table when clearly we were only half way finished the first course was poor timing. But overall we will definately be back. Friends of our went Saturday and also gave Jargon the same praise.

Our waiter, Steve, was attentive and made great suggestions! The meatballs and chicken croquettes apps were soooooo good! We split a plate of scallops and pork belly garnished with okra, kimchee, and grits. The scallops were perfectly cooked and the kimchee paired very well with the pork belly. Cocktails were tasty and the caramel brown butter cake was a heavenly end to our meal, personally brought to the table by the owner. A delightful meal start to finish.

Wonderful service and food. I was super impressed by the fact that our waitress Kate was VERY DILLIGENT about making sure ALL the food was okay for my cousin who has a few allergies. She even came over and told us that there was 1 ingredient in my dessert that my cousin was allergic to, so she shouldn't taste my dessert. Casual chic new American restaurant featuring a relatively small menu of seasonal farm to table dishes. The food is crafted with exquisite care to balance and compliment flavors, and our party of four enjoyed virtually every dish. The dishes aren't too large, which allows room to sample appetizers and desserts, but raises the cost. We sat outside on the patio, which felt both comfortable and secure during the coronavirus crisis. This is a stellar restaurant which focuses on the food, but is expensive.

A foodie’s paradise... Multiple food-gasms! For starters, the people here treat you like a real human. They are kind, and genuinely interested in giving you a great experience. You never feel rushed or ignored. The place is casual in atmosphere, quiet enough for a romantic conversation, with nice music playing on vinyl, but the food is top-notch gourmet dining. There are plenty of gluten-free options (all of which were truly delicious) My wife and I agree: we have a new favorite restaurant in Asheville! I resisted the urge to pull out my phone and take pictures of the stellar artistic presentation and instead immersed myself in the experience. I encourage you to do the same. We will be back!

We happened to choose this place because it was pretty much the only place that had opened reservation times for mother's day. It wasn't even on our radar before. However, it turned out to be a fantastic experience! The decor and vibe on the inside is cozy but interesting. The service was top notch (our esteemed attendant was Thomas, who was spectacular). The menu was thoughtfully done, with classics you could count on (the French toast for instance) and dishes that dared is to be adventurous (the berry omelette was surprisingly tasty!). The jewel of the menu, in my humble opinion, was the lobster and crab quiche with a dreamy hollandaise sauce. That old Cuban cocktail just topped it off. We had more than a few of those ;)

Andrew the bartender was a wealth of knowledge and we tell that he put his all into every single cocktail he made while we were there for the entire restaurant. This restaurant is beautiful. Intimate, fun with a healthy dose of tongue-in-cheek...eating should be fun and it was here! The chef kept us entertained with local knowledge and a history of the food we were eating. Food which was incredibly thoughtful, flavorful and satisfying, the kitchen here is clearly enjoying themselves. I really appreciate seeing local ingredients used in a variety of ways in multiple dishes, maximizing creativity and minimizing waste. The owner Sean was incredibly hospitable, offering us anecdotes over the decoration in between expediting orders and switching up the well chosen vinyl spinning in the corner. We will be back for sure!

Such a good dinner experience. Rich flavors on everything and great atmosphere. After we ate the bone marrow and tartare my wife ordered a shot of Knob Creek to take using the bone as a luge, which despite seeming somewhat hokey, actually added to the flavor of the liquor and the fat in the bone smoothed it nicely. 10/10 would recommend.

An absolute gem! Truly one of the most thoughtful dining experiences I've had in Asheville. The menu was varied, seasonal, and sourced locally. We began with the pickled watermelon salad, which was perfect for the mild summer afternoon. Sweet, bright, and acidic. On the recommendation from our server, we tried the braised octopus with chorizo and found to dish to be stunning. Our server was polite, and engaging without being overly pushy. This beautifully decorated small restaurant in the heart of West Asheville serves eclectic and unique dishes and and delicious handcrafted cocktails. We love the late night jazz on the weekends. Portions are a bit small for the prices so be prepared to order lots of plates. The owner is super accommodating and Karen the bartender is great at what she does. There is a feel of entitlement from the hostess and servers that makes you feel like you are lucky to be there. This was proven on our last visit when we watched them hold an empty table (which we were told was ours after a half hour wait) to be given to a reservation party even though they were not present yet. Another table was signing checks but making us wait while a table sat empty seemed rude. When we overheard the server tell the hostess "her friends were 7 minutes away", we walked out the door.

From reconstructed bowling alley floor. The menus are repurposed board game tables—much how jargon is language is reconstructed, so much is repurposed here!! Our server/ bartender Chris was AMAZING! His drinks were inspired, and his recommendations on point! I had the Spanish octopus (to die for) and my husband had the shrimp and crawfish etoufee (also amazing!). He then recommended so many amazing things to do on our trip. So far—his recommendations are SPOT. ON. I can’t recommend this hidden gem enough.

My wife and I just visited Asheville for our 15 year anniversary. We ate at Jargon on our last night there and my only regret is that we didn't stay another night so we could eat there again. It was some of the best food we've ever had (and we've traveled enough for that to mean something).
We had the Scallops and Pork belly and the Bison Strip Loin and both were so delicious I considered ordering a to-go of both so I could enjoy them again.
The atmosphere is warm and inviting and the restaurant isn't so big that you feel like they're just trying to pack as many mouths in as they can.
It won't surprise me when I start hearing people talk about Jargon. It's one to look out for.
