This was an experience, not a dinner. Wow. Every bite was like nothing I had tasted before (in a good way). Honestly, I can't remember the last time a dinner out felt like such an authentic cultural experience. This is a MUST try if you like Sushi. Thank you to the all the staff, our incredible server, and the best Sushi Chef I've had to privilege to encounter.

The Omakase is an absolute unforgettable experience. The staff is incredibly helpful. Knowledgeable and pleasant. They explain every meal every piece of sushi that they bring out to you and with each course things get more incredible, delicious, and amazing. This is an absolute must try while in Seattle. Write down by Pike. Place a very exciting, fun and engaging experience and culinary journey not to be missed!

It's hard to describe this restaurant in any words other than "incredible." I think I'm ruined for all other sushi going forward. Our chef Khota was an expert and did an incredible job during the entire Omakase experience. I highly recommend sitting at the Chef's Table (the bar) instead of reserving a table. It's much better to be able to talk to the chefs and watch your courses created in front of you. The sake selection here is excellent, they have some lovely options for those that enjoy an unfiltered variety. I will be back! ...eventually. The price is higher than many sushi places for a reason. You will not leave disappointed.

Come early and get the chef’s table if you are unable to get a reservation or just want sushi. The chefs are so nice and chatty and I had a great time talking story with them about sushi.
Everything was fabulous from the servers to the food. It came out fast and each dish had a short description. I highly recommend it after a trip to the market. A plus is seeing the sunset from the restaurant

Cher Chris was amazing. We were able to do the Chef's table omakase and everything was just delicious and melted in your mouth. Highly recommend it for a special occasion (was my birthday) or just a fun date night to get the knowledge and expertise of sushi chefs!

I've had sushi all over the country, including Japan and this place ranks up there with the best. If you have the chance to sit at the sushi bar, it's an amazing experience. The food was outstanding. I would eat here again the next time I visit even if I can't sit at the bar again.

Good food. We couldn't get the chef's table so we sat at bar and got three omakase. The food was good but nothing that wowed me - 600 bucks for three omakase and two drinks. The 15 pieces came in group of 3-4 pieces. The first few pieces had the rice at perfect temperature. Slightly warm but the later dishes had rice kinda cold.
Service at the bar was superb and total made the dinner experience.
Overall, if I go again I'd get the chef's table or order something else off the menu.

Best sushi experience we’ve ever had! Definitely pricey but worth it. We got a la carte nigiris, tuna poke, black cod and a spicy tuna roll. Everything was unbelievably good, especially the black cod. The ambience is very nice and the the service was great!

How fortunate to have shirosan as our chef. It is the best omakase experience I’ve ever had.
This is by far the best omakase from a value perspective. We were served 21 pieces, all absolutely delicious and no doubt you’ll leave full. This is always one of my great fears with eating sushi in general where I’m rarely full. You will not have this problem here. Each piece was delicious and shriosan was talkative and friendly throughout the whole meal, which is quite different from other omakase experiences where the chef is much more stern and serious.
Service throughout was spectacular, attentive but unobtrusive to the experience. I decided to do the add on which was worth it as how often will you have shirosan as your chef. The price to value exceeded all my expectations relative to some omakase experience is nyc costing $400.
If you’re in seattle, definitely take the time and book this place.

This is our second time at Sushi Kashiba. We sat at the dining table. Our server was Brandon. He is very nice, polite, and attentive. I gave him 10 stars for his service. We had a wonderful time for our 15th year anniversary. We will be back again and next time we will have to aim to sit at the sushi bar to gain different experience. Thank you.

Amazing Omakasi experience at the sushi bar. Chef James was very friendly and knowledgeable of all the tasty fish that my husband and I got to enjoy. The rest of the staff were friendly and the service is on point. Worth every penny. We are definitely returning when we visit Washington.

Wow. My husband and I sat for the Omakase (Chef Counter) experience. This an dinner I will never forget. Every bite was careful crafted culinary artistry. Not only is the food incredible, the experience at this restaurant is top tier. The staff are so knowledgeable, professional and friendly. If you are lucky enough to sit at the bar with Chef Shiro, you will not be disappointed. Not only is he incredibly gifted, he has such a great personality and warm spirit. I HIGHLY recommended Sushi Kashiba for anyone but especially sushi lovers.

This was an experience like non other, from the second you walk through the door. Would highly recommend having a reservation because it was busy, however, that did not stutter the service at all. Upon entering Sushi Kashiba we were greeted by the hostesses and sat quickly. Instantly our water glasses were filled and Jordan our waiter for the evening wasn’t too far away after. We opted for the Omakase and were treated to the best sushi we’ve ever had, it truly was wonderful.

The sushi was good, no doubt, but the overall experience wasn’t as good as the other omakase I had. There are cocktail bar dining table area and the sushi counter seatings. The cocktail bar area are a bit noisier than normal sushi restaurants. And because the cocktail bar are close to the sushi counter, this made it hard to hear the sushi chef. There were four sushi chef at the sushi bar, Shiro himself was serving the first 5 people, explaining and interacting more in depth with the customers. Our chef was next to him, serving the next 4 people, he had to repeat to us what he was serving per 2 people group, and it was still hard to hear sometimes. The other two chefs each serve 2 customers only. So I guess they can hold up to 14 customers at the sushi bar. Since there were little to no conversation with the chefs, everyone ate so quickly other than the 5 people with Shiro was serving. This kind of pressured me to eat faster, and not taking my time to enjoy each piece of nigiri.
The sushi were serve in groups with themes: salmon, tuna, white fish, shell fish, mackerel, and dessert. This was an interesting way of serving which I had not experienced before. However, this way of serving also make me feel like I need to hurry and finish the whole set once it’s served, rather than taking some break between each nigiri.
The fish selection felt more generic, perhaps because the store is located in a touristy area, targeting general public taste. There wasn’t any fish that’s specially selected by the chef that I have not heard before. Nothing crazy that some people may love and others will hate. The flavoring of the nigiris are also on the simpler side, not creative or innovated.
Total of 21 courses (1 hand roll + 20 nigiri) with a egg tofu and a miso soup for $160 + tax + 20% gratuity. There’s an option of adding $30 for three more fatty nigiri, but I was so full already. The sushi and price point was good, but it’s not the best omakase experience I had. I did get to see the legend Shiro Kashiba, though unfortunately not able to get served by him.

We walked pass Kashiba and managed to get the seats for us two at the bar. We ordered black cod, agedashi tofu, Rex sole karaage and Kashiba rolls. The servers explained all the dishes when they served to our table. They kept checking on us and make sure everything was ok. We enjoyed the food very much. Great food and great service. We will definitely come back to try other dishes.

Great sushi! The best sushi I have ever had so far. We did the chefs table omakase and that was a delightful experience. The whole thing is 21 pieces of sushi. I got full halfway through and the chef was very accommodating by giving me sashimi instead of nigiri, so no rice since I was already full. If you think you can't handle 21 pieces maybe try the omakase but at a table instead of the chef's counter so you don't embarrass yourself like me, but it was still worth it. I enjoyed myself and the sushi quality was just superb.

Hands down the best omakasa in Seattle. Shiro still plays a major role in everything that is served and if you get a spot at the counter you will not be disappointed. The cuts of fish are seasonal and unbelievably fresh. Each chef at the counter brings their own style and you just eat and have fun. If you don't have a reservation just show up around 4 and wait in the line for a spot. It takes some time but it's worth every minute in line. It's hard to say much more about the food, it's really just the best Japanese neighborhood sushi maybe in America. Go read about Shiro and then just go for it. If you are still not sure, look at all the pictures😎.

Great sushi with creativity of the chef.
Went here at late night (8:45 pm) on weekday with a reservation for dining room, but the staff told us we can also try the sushi bar and we were thrilled and gave it a try!
There was around 20 pieces of sushi (including the dessert sushi of tamago and unagi), one side (agedashi tofu) and one tuna handroll.
I would say I am most impressed with the salmon sushi with onion, king salmon sushi, saba sushi, tuna hand roll and the agedashi tofu the most.
They were outstanding and was pretty authentic with wonderful presentation.
For the rest, they were also pretty decent but not as surprised as the ones above.
The set definitely worths $160 + tax and tips with the portion and quality!
As for if it worths it for waiting in line for hours for the sushi bar, I would say it depends on how you like sushi though.
But if you do not need to wait for the sushi bar as us this time, definitely give it a try!

Best omakase spot I’ve been to so far in North America. Booked last minute reservations through the four seasons concierge. A pleasure to dine there every year. This year I got to meet chef kashiba himself. A wonderful experience and I look forward to the next time I am back.

After three attempts I managed to make reservations. I found the meal to be completely worth the time and effort.
A party of 4, we sat down and were blown away be the fresh savory sushi. The geoduck alone is worth a visit. Get some hot dishes as well as sushi as the fish preparation is divine.
I highly recommend.

The sushi was, of course, fantastic. Fresh tasting and some of the courses were well presented. Compared to an omakase experience I’ve done in Japan, I wouldn’t say this is a a good value though. Compared to Japan, I didn’t like how we just sat at a table, because we don’t see how the sushi chef prepares each dish. So it misses on the intimate experience, at least in my opinion.

Sushi Kashiba is easily one of my favorite sushi places in all of Washington. Their staff, service, and especially the food: all top notch. You won’t be disappointed if you opt for the omakase- it is an easy way to experience Kashiba at their best. If you’ve got extra room: the black cod and tempura are both excellent.

Got a table side omakase by walk-in. After tax was ~$320 for 2 ppl. Everything was great except 1 thing.
The tofu piece was recommended to take by 1 bite. It was super hot and tongues hurt…

Just need to start off with saying Chef Kohta was 5/5, well knowledgeable, great at explaining everything, and amiable.
Food - nigiri selection for Omakase was greatly organized by types of fish and flavor with miso soup and tofu in between to help balance between orders.
Ambience - eating at counter the chef was 5/5, would definitely recommend lining up to get a slot. They do 1 hour 45 minute slots and it starts at 5 pm (next slot being 7 pm) and you would need to line up (got there around 4:15pm and had the last slot for 5 pm). Counter serves approximately ten people.
Chef - Kohta was 5/5 would go back again just to request him specifically.
Overall definitely worth the price and would come back again when I visit Seattle.

I’ve been here twice now and it is hands down as amazing as everyone says. The first time I came with another friend to walk-in around 6pm and it was about a 1 hour wait for seats at the drinks bar. Reservations are for tables only, seats at the drinks bar and sushi bar are available for walk-in guests. However, seats at the sushi bar will get booked up for the night by guests who line up even before the restaurant even opens.
So the second time, I came back with a date and we lined up outside the restaurant at 4pm on a rainy Wednesday evening. I’ve heard that on busy days, people will start lining up as early as 3pm but for us, we were the first ones in line that day. People didn’t start showing up until about 4:30pm. But I’m so glad we were first because we got to sit at the end of the sushi bar and be served by Shiro-san himself! He’s at the restaurant most days but will only get behind the sushi bar at random times. It was such an amazing experience to be served by him. Every piece of sushi was amazing, the staff and service was top tier, and Shiro-san was such a joy to be around.

I have never had a greater restaurant experience than this. The level of service alone was absurd. I don't think my water glass ever went below half full. And our sake glasses were never empty. Food was brought out quickly with each item being explained and instructions on how to eat each course. The omakase was also easily the best sushi I've ever had. Granted, I'm no sushi expert, but I think this was easily worth the price.

Gorgeous omakase dinner! We waited about an hour and a half before the 5pm opening and got a seat at the bar for omakase on a Friday. Highly recommend ordering a bottle of sake to enjoy with this memorable meal! The service is unreal and this was easily the best sushi experience I’ve had in my life. I can’t wait to come back!

I'm a self proclaimed picky eater, but despite my pickiness, I found every single part of this meal absolutely delightful. At the very least, you'll have to be okay with raw fish, but hopefully that is a no brainer, given that you're considering a sushi restaurant.
Service was excellent, the waitstaff took the time to educate us regarding each ingredient, and had the knowledge to answer any questions we had.
The food was absolutely delightful, I've never had sushi this good. I'm indifferent about shrimp, but the quality and preparation made it surprisingly delightful.
I could spend paragraphs going through each course of the meal in detail, but I feel it is better off experienced in person!

We celebrated an early Valentine's Day with omakase at Sushi Kashiba. It was perfect for what we were looking for -- intimate and relaxed environment with amazing food and friendly service.
Our sushi chef Kohta was fantastic. Super attentive, knowledgeable, personable, entertaining, and most of all was making some of the best sushi we've ever had! We appreciated the information about how the menu may change seasonally, which fish are in season and when, where the fish come from and what the Pacific Northwest is known for in particular (like the geoduck!).
Our favorites were... gosh it's hard to say, really everything was great. Geoduck, scallops, salmon... nearly each piece could be considered a favorite. The garnish on the white fish stood out to balance the mellow flavor.
The rest of the staff also friendly and fun. The experience was lovely, and no issues whatsoever. We'd highly recommend.
To note: We had previously tried to get an omakase seating over summer on a Friday. We arrive 45 minutes before opening, but this was not early enough! This time, it was a winter night, and a Thursday -- both of which worked in our favor. We arrived 45 minutes early and we were second in line! The omakase counter was full in the end, but 45 minutes early was plenty of time. Think of an activity for when you stand on line ahead of time and it breezes right by ;) The area is covered and well organized, so if it's raining you won't get wet. Total bill for Omakase for 2 (gratuity automatically included) was $465.

This place is amazing in every way! I have had a fair share of Omakase and Sushi Kashiba is undoubtedly one of the best I have ever had. The level of mastery in Sushi making is reflected in every bite you take. I had made a reservation for Table dining far in advance. However, I was very fortunate to have been able to eat at the Chef counter as a walk in the day before my reservation and it is highly recommended. I returned the next day and have dinner at the table as well. If you can, (and should) try to do both. The difference between Chef Counter Omakase and table dining are 1. Price $160/seat. 2. Totally Chef’s choice-he served you sushi as he make them, amazing!! 3. You get to interact with your wonderful Chef, Thank you Chef JASON for amazing hand-crafted sushi. 4. You can’t order from other menu.. so no appetizers and other AMAZING items. You can do Omakase course at the table as well so if that is what you prefer. I had Omakase again starting at $120 but also ordered Black Cod and Sautéed Long neck clams. They are both so delicious!!! Everyone was so amazing and truly made my experience so precious. Service was delightful. They pay attention to every detail. The very very nice touch is Chef Shiro Kashiba is still making and serving sushi to customers. Although your sushi may not be made by him, you may be greeted by him as he walked around and busted table periodically. Thank you SO much everyone at Sushi Kashiba for having me. You made my BD special and I shall return next time I visit Seattle again. THANK YOU!!!

We came here on a Saturday night with a reservation that we made 3 weeks in advance. My boyfriend got omakaze and I got the fried chicken and some cooked sushi pieces since I don't eat raw fish. Everything was delicious and I loved their sushi, the ingredients were fresh and you can see the sushi chefs make them behind the bar. The service was fast and our waiters were all friendly and helpful! Would definitely come back again!

My first real Omakase experience prepared by 3x James Beard nominee Chef Shiro Kashiba. It only took 64 days to get in, not like anyone was counting. Most was flown in from Tokyo hours prior other than the local WA uni/salmon 😍

Top to bottom exemplary experience. Sushi Kashiba has unquestionably earned its legendary status in Seattle, as it was easily one of the best dining experiences I’ve had in recent memory.
We sat at a table and ordered the omakase, which came with about 15 pieces of nigiri, a handroll, and a few small dishes. There wasn’t a bad bite in the entire meal, with some unexpected standouts like a daikon wrapped in-house smoked salmon.
The wait staff guide you through your meal, telling you about each piece as they come out and the order in which they should be enjoyed. Your glass is constantly full, and the staff will preempt your every need. (Not once was i looking for someone to ask something, or waiting on food longer than expected, etc).
Our server was excellent. He was evidently passionate about Japanese cuisine, and when we were looking for one last bite he suggested a special off menu seared fatty tuna which did not disappoint.
Sushi Kashiba is not cheap, and does not intend to be. If you’re looking for the best value per bite of food, and dining experience is meaningless to you, this place is probably not for you. If you want to fill up quickly and affordably, maybe go get a cheeseburger instead.
For those that love and appreciate high quality sushi and fine dining, I would strongly recommend checking this place out.

You're here for an occasion and that occasion will also be omakase. I've had some of my favorite sushi bites at this restaurant and it's an amazing experience. But... after being here a couples times, everyone around us is eating omakase. The courses are also relatively similar over the years and they seem high volume so the omakase is more of going through the motions and less of a real occasion. Don't get me wrong, every piece is delicious and there is an incredible variety of fish and flavors. However, it is getting pretty monotonous and less of an occasion. If I'm paying $120+ I can try other places around Seattle before I circle back here.

Pricey but sheer excellence. Nab a seat at the bar if you’d like the omakase. I believe there are only 24 seats a night so make sure to line up right at opening or even before around 430–5. You might even get lucky and get served by Shiro himself.

$220 after tax and tips on a $160 Omakase at the sushi bar. Was here in 2018, looking at my past bill. It was $120 back then. I think this is an experience to be served by the legendary. Chef Shiro is the first person to introduce Seattle the first sushi bar in the 70s.
I am already filling full at the second last plate. However, if you have more appetite than me, you may need to add one extra pieces. Make sure you tell the sushi chef beforehand. So that that can serve you more before the dessert sushi. I did have Omakase in Japan, and those are good too. I think the price is similar to here.
The fish here comes from everywhere, Japan, Norway, Alaska, etc. My favorite is the silver fish and the toro.
Sushi bar does not offer reservation, you will have to visit the restaurant in person and put down your name for 5pm, 7pm, 9pm slot, people usually lined up half an hour before it opens at 5. We came here around 6pm, and the 7pm is already full so we had to take the 9pm slot.
Chef Shiro usually serves at the corner. He is at his 80s and still healthy and well.

I visited Kashiba on a late night in November 2018.
I wasn't able to make a reservation, so I decided to walk there to see... just in case.
I was just so fortunate to grab a seat, only because I was there alone!
But, starting from the chawanmushi to matsutake dobin mushi to warm your soul, to the cold crisp sake.
It was one of the kind of experience.
And yes, indeed.

something new that I have tried here is the rex sole karaage, the bone is a bit salty, but the fish meat is great, and fresh, texture is incredible. Chutoro otoro, great as usual! Love those. The uni gunkan from Baja California is sweet and fresh, first piece is starting to melt so eat those quick! The scallop mackrel and kohada sweet shrimp are also amazing! Recommendation from server is the kama toro, which is the toro meat closer to the head, absolutely amazing!! Seared a little bit, great flavor and smooth!! Second recommendation is the engawa nigiri, meat from the flounder's fin muscle, very chewy one.

We got the omakase at $120 per person and a few drinks. Autogratuity is included here at 20%. Every piece of food was amazing, but here are my highlights:
1. Fatty tuna, the wagyu of nigiri. So buttery and delicious. The server told us ours had come from a 400lb tuna just caught
2. Shrimp nigiri was the most well made shrimp I've ever eaten at a sushi place, the texture was less chewy than others? Such a good texture
3. Barracuda, my first time trying this. Mild on its own, the leaf thing put under the fish was such an interesting flavor combination though
4. Crab, served with no soy sauce so you can appreciate its flavor
5. The spoonful of roe. Just a fun experience to eat it?
In between palette cleansing egg dish was delicious, as well as the tamago dessert. The whole thing is such an experience, and worth enjoying as often as you can make an excuse to spend that amount of money on dinner.

this is a review for the counter omakase.
tip: get there at least 30 mins before the omakase flight you want to catch. so 4:30 for the 5pm flight and 6:20ish for the 7pm flight. they try to get everyone done in around 1 hr 45 mins.
service: top notch for such a small space, drink refills and plate changes are done without asking.
food: very fresh fish, the nigiri and the dishes served in the omakase were quite thoughtful in general. a bit of a pacing issue at times, but you shouldn't do omakase if you don't have a lot of time anyway. some seasonal choices which reflect positively on the head chef.
ambience and decor is nothing special imo, but not deducting points for that.
recommend adding on the 3 extra pieces for $30. those 3 pieces are essentially part of the omakase menu as well. any pieces beyond that will still be very good value but will not be as well thought out.
9/10 overall. quite expensive but all food in 2022 is.

I had their omakase many years ago and my most recent experience was just as good as the first.
If you have the time, definitely try your luck to get seated at the chef's counter (which is first come, first served), or if you know you're coming at least a month beforehand, try to get a table reservation.
Servers here are so sweet and very detailed when explaining each fish and where they all came from. Make sure to tell your servers if you have any allergies or dietary restrictions.
Just sit back and trust the chef to take care of all your tastebuds.

All I can say is wooooow. It was the best sushi I have ever had. Every single piece was absolutely delectable. My only qualm was some of the raw fish was a bit warm to feel fresh. The wat staff was so professional and even handled a rude man with finesse and grace. One waiter was so kind I'll never forget, he made me feel so at home and I could tell he was genuine with his words and actions.

Best in town. We return to Kashiba omakase for nice sushi couple times a year. Only time I did not enjoy was the Valentine take-out box during COVID. I decided to think that I just helped Kashiba alive over hard times for that experience rather than a real Kashiba experience. There has been times where I would be slightly disappointed compared to its general experiences, but they would still be better than most of the others.

It is very hard to judge Kashiba which is one of best sushi restaurant in Seattle. Camparing Kashiba with other top sushi restaurants in USA, I gave it a 3-star. The sushi rice is very soft and sticky. The Hamachi belly and Hokkaido Scallop were very good but the rest of the sashimi was at par. I personally prefer blue fin tuna from Boston. It usually has more flavor than Mexico farm raised tuna. Today, April 1st, is their first reopening day for indoor dining. Most of the fishes were not available; no Uni no Aji. I was very surprised that Aji was missing tonight. Baked Black cod was lack of the usual fish natural oil. It could have been more flavorful. One of the Star tonight was earned by our server, Jordan. He went out of his way to make our dinner enjoyable. BTW, Kashiba automatically adds gratuity to the check but the service is very good and well worth the money. We should have avoided the Ume shiso roll tonight. Anyway, the fish quality is better than most of the Sushi restaurants. You should give it a try.

I was in Seattle for a work trip and was purchasing some tea at a nearby store. I overheard a couple talking with the store owner about Sushi Kashiba. They mentioned they had reservations there and were asking the owner if he’s been there before. He said yes and that the best thing on the menu was not on the menu. (This is what peaked my curiosity) He said the have the sushi chef just create the bites based on what was fresh and delicious that day.
This was all I needed to hear and i headed straight there. I loved every minute of it. I loved the food, the ambiance, and the explanation of the fish and food I was eating. Wow!

Sushi restaurant with expensive chef's counter pri-fixe menu. I like fine dining and doing tasting menus and this was ok but not exceptional and a little over rated for the price. The experience was less intimate and personalized than I generally expect at that price. They push upsells which I also find a little tacky at the price point. That said, the food was all delicious and fantastic execution. It was some of the best sushi I've ever had, but I've had equivalently high quality sushi at substantially cheaper restaurants. The atmosphere was not noticeabley nicer than a normal sushi restaurant. Over all, a good meal, but not worth the price.

I came here with very high expectations based on the reviews and the reputation. Unfortunately, I was very disappointed. I am extremely experienced with sushi and have eaten omakase on every coast…I feel it’s usually the way to ensure an interesting meal, with options you wouldn’t necessarily think to try. This was essentially the opposite of that concept. It was very boilerplate, common choices, with many repeating fish portions. For example, king salmon showed up more than once, as well as snow crab. The uni was low quality, off colour indicating poor selection. The non nigiri portions were bland and lacking innovation. All in all this was an extremely mediocre meal, albeit very large and filling. I expected more from a venerated restaurant in a fishing city.

Came for my boyfriend’s birthday! We both ordered the omakase and the food was delicious, lots of unique ingredients and flavors as well as a wide variety of fresh fish. Where we sat in the restaurant had a partial view of pike place and a partial view of the water/ferris wheel. Service was friendly and waiters/waitresses were knowledge about each dish. We also got to see the famous Shiro Kashiba as well which was a special bonus! Can’t wait to be back =)

This was an amazing omakase and fine dining experience. My partner and I did the chef's table omakase for her birthday dinner. We both walked away with huge smiles on our faces. Our chef was very skilled and fun to talk with as he explained everything being served, where it was from, and how it was prepared. We had about 20 nigiri with the default omakase experience and both chose to add on additional nigiri at the end because the taste of everything was so exceptional. We don't often spend this much on a meal, but we're glad we were able to experience this, create a wonderful memory, and set a very high bar for our future sushi dining ☺️

Sushi master and restaurateur, Shiro Kashiba, has been a fixture in Seattle for three decades, and in that time his first local restaurant, Shiro's, became the gold standard for sushi. Not just in Seattle but throughout the northwest. So it's little wonder that his new namesake restaurant, Kashiba, opened with high expectations and great fanfare. And while there are always areas for improvement, it's safe to say Kashiba has exceeded expectations. The restaurant is sublime; beautiful fish, perfect rice, a wonderful saki list, and food prepared consistently and wth a light touch. Everything is fresh, creative, and well executed with an eye toward perfection.
Of course, this level of quality costs more, to say nothing of the fact that good sushi is often expensive. Over-fishing and farmed fish have made the cost of the real thing very high. That's why the cheap sushi joint down the street trys to pass off Escolar as Salmon, will skimp on their selection, cuts of fish, and freshness. The best sushi is sourced selectively and prepared with affection and attention to detail. And Shiro's staff focuses on these details. That, along with their location in Pike Place where the former Campagne was situated are just some of the reasons this fine dining establishment is so expensive. And if you don't appreciate these things then you may not see the value.
But when you're after this kind of quality and experience, I can think of few better places to go.

I once considered Sushi Kashiba one of the finest dining experiences in Seattle: phenomenal food, immaculate service, and a refined atmosphere. On my most recent trip to Kashiba, these expectations were shattered by my experience.
This was a special occasion for my partner and me. We were seated in a corner table near the bar. At the bar was a group of rowdy tourists: backwards baseball caps, loud laughing, obnoxious joking. This behavior was being encouraged by the bartender. Was this a case of the bartender giving the customer what they wanted? Certainly it was. However the dining experience was ruined for everyone on that side of the restaurant. The atmosphere was indistinguishable from a tourist spot down on the Peer. Our waiters were unable to describe the dishes for the noise level.
The omakase has also gone down hill: fewer courses and luxury ingredients. No uni, for example. The price has remained the same.
My suggestion: raise the price of omakase to reflect the reality of inflation rather than cheapen the product. Move to omakase only to discourage casual pop-ins. Enforce a standard of decorum: no baseball hats, no t-shirts, no rowdy behavior. People come to Kashiba expecting to pay for a luxury dining experience. Provide it, even if it means you have to enforce standards of dress and decorum in Seattle. Open up casual dining restaurant in a tourist area if you're truly interested in cultivating that atmosphere.

I tried this marvelous sushi restaurant after finding it on Eater Seattle. The chef trained in Japan with the famous Chef Jiro (I Dream of Jiro documentary). The waiters are knowledgeable about the sushi and can recommend some wonderful choices. I had the sushi course peak menu for $85 (13 pieces nigiri and sushi roll 4 pieces). The fish was flavorful and tender, every bite was reminiscent to sushi experiences in Japan. Note, a 20% is automatically added to the bill for waiters.

Has been ordering for pickup from Sushi Kashiba during the pandemic and even though ordering sushi to go might not be the ideal way to eat sushi, I have to say that Sushi Kashiba is as good as it gets. I have not tried better sushi anywhere in the US, not even New York, and the quality and flavor compares to famous sushi spots in Tokyo.

From the moment we walked in the team was so kind and generous. We walked in last minute for dinner and they were able to seat us which was a miracle to begin with! And from then on the night continues to be absolutely perfect from the great staff, food and drinks. This was such a memorable experience that we will truly cherish.

The fish is absolutely delicious, and the sushi chef pairings are perfect. The rice is perfectly cooked and seasoned, and the nigiris are all served beautifully.
If you appreciate good sushi, this is the place to visit. I encourage you to savor every bite, especially because these bites will be a bit more co$tly :)
The service was also outstanding yet unobtrusive. The ambiance is nice and clean, although the music can oftentimes be too loud to have a casual conversation.

One of the best sushi experience I’ve had. The restaurant is nicely decorated. Staffs are professional and helpful. They explained each dish, the fish, the origin, the preparation process as they served their food. Had the omakase. It is expensive, but it’s worth the price. There was a wide variety of sea food in the omakase course. A lot of different flavors and textures. Would definitely recommend. I’ve had more expensive omakase in Tokyo and I would say the food quality and presentation is definitely comparable.

I am writing this review quite late as I went here October 2018. Sushi Kashiba is best Omakase I have ever had and is quite the experience. My friends and I arrived two hours before they opened on a Saturday to ensure that we were served by Chef Shiro Kashiba. Although it was a bit rainy the wait was well worth it. The staff and service was exceptional. Chef Shiro Kashiba was actively engaging with us and instilled great care in explaining each of the fish's origin and flavor. I spent nearly $270, which includes Omakase and other nigiris that I wanted, and I would do it again.

Great omikase, pricey but to expected, freshest sushi around but not life changing. Definitely worth a try some time in your life if possible.
26 pieces omikase ended up being $220 over an hour and a half. They definitely run the gauntlet of all types of seafood and even import from different countries. Needless to say, every piece was amazing, but some stand outs would be the seared otoro, uni, mushroom soup and salmon pieces.
The chef was friendly and definitely enhanced the situation. Wait staff were incredibly diligent and the space clean and comfortable. The wait was also alright for such a popular place. No reservations for omakase so try to start waiting at 3:30 for the 5pm service, they only have 14 seats and next is 7pm.
Now for the reason this review is a 4 and not 5. Maybe it was my own inexperience with omikase, but we were expecting to eat 15 pieces for around 120 and then we could ask for more (and pay more). We didnt really count as we ate but got pretty full around 20 pieces I think. We asked how many more and the chef said 3, but definitely gave us 6 more pieces. It was definitely a surprise seeing the total count and price. I'm not sure if the menu was 26 set pieces or we should have just explicitly told him to stop.
So overall, a very memorable experience that I wouldn't take back. I would recommend others to try it if its within their means, but maybe talk to your chef more about what pieces and how many pieces you get.

Absolute incredible omakase to-go experience. 10 piece nigiri + 3x3 pieces of sashimi along with a delightful rice, and the legendary NYT featured black cod that I could write an entire paragraph about. Total price after tax/fees ~$125 per person.
Definitely cannot afford to order this regularly, but absolutely worth it for any sort of special occasion, or when you feel like spoiling yourself. I think I've ruined sushi for myself for the next year because basically everything else in Seattle (short of Shiros, and maybe Wataru or Kappo Tamura) will pale in comparison to the wonderful experience I had for dinner.

The staff is super friendly and knowledgeable of their menu. The experience is definitely worth the price. I sat at the table but the bar looks soo fun.
The order in which they bring out the courses flowed so well. Each piece was so fresh and phenomenal. I loved every part of the omakase experience. It’s definitely something that you have to experience for yourself.

5 star Omakase in Seattle. Be prepared to be speechless when you take the first bite.
The ingredients are extremely fresh, my favourite Nigiri were geoduck, shrimp, fatty tuna and fatty salmon. Must try the tea pot (dobin mushi) mushroom soup (Tricholoma matsutake) if you are in the right season. It was incredible fresh and aromatic. Another impressive order was the fried shrimp head, I don't normally enjoy shrimp head but this one was so crispy and tasty.
There are about 5-6 chefs behind the table, including Chef Shiro!! The sushi chef who served us was from Osaka, he was very friendly.
They do not take reservation for the Omakase bar table, so you need to be there early to put your name down. We put our name down around 6pm and just hung out around for some beer before our reservation was ready. They called us around 8.30pm, at that time we were starving lol
Parking was an issue as other restaurants in Seattle.

Price matches the quality of the dishes. This is fine cuisine and it delivers in its intended goal. Food was of the outmost quality and the craft was palatable. The prices are high but so is the experience, and therefore worth it if you enjoy sushi and a new takes on classic dishes. The service was incredible and very helpful. The fish was short of the best I had and had a unique taste warranting the excursion, the tempura was also a new take on something so familiar. I would recomend this to anyone seeking the best the city has to offer.

The sushi lacked some flavour for me, though. Then we had fish and the tori karaage as mains, especially the chicken was a small portion- with no small sides or so-which would have helped balance the fatty dish. The service was alright and the ambience as well. But really not as great as it seems hyped to be.

Amazing sushi, by far the best I have ever had. We did the omakase (chef's choice) at the sushi bar. The toro and chutoro were my favorites, but to be honest everything was delicious (except for the geoduck, which I'm not a fan of). I had a sake paring that went really well - they brought different types of sake for different parts of the omakase.
Be warned, this place can get heavy on your wallet if you're not careful! We ended up eating ~24 pieces of nigiri and 2 hand rolls, which came out to about $200 post tax + tip. With 3 half pours of sake, I paid about $240 total. Definitely worth it once if you can, though if I go back I'm just going to order a couple pieces of chutoro and hopefully save my money :).

I arrived at 3.55pm on sunday and there were already 6 people waiting. The next group came about 4.20ish. A waiter finally came out around 4.55 to start the list.
There are 14 seats at the counter and a 5pm and 7.30pm seating. There were about 5 sushi chefs working the counter, so who you get is pretty much luck I guess.
The quality of the sushi is very high, I'd say easily comparable with high end sushi in Japan. The omakase is slightly different depending on your chef. There is no set menu. He just keeps making sushi for you till you surrender.

Omakase from Shiro Kashiba himself is the single greatest culinary experience of my life. I have never tasted sushi so good. He is a friendly and funny guy, and told us stories about his life and why he chooses the fish that he prepares. The staff at Sushi Kashiba is impeccable and the service is crazy good. Get here an hour or so before it opens to give yourself the best chance of sitting at the sushi bar. It's worth it.

Hands down best omakase experience I've ever had, which might've also been due to having the pleasure of having the man himself prepare our meal at the bar. It felt a lot more enjoyable and social than other high end sushi restaurants I've been to, which are typically more quiet and reserved fine dining. Seafood was fresh and prepared very well, highlights being the toro and seasonable ebi which completely melt in your mouth.

An excellent restaurant with fantastic food and flavors. The staff was courteous, attentive and welcoming and elevated the experience. Ultimately though, it was the food that makes the visit worthwhile. The flavors were amazing and balanced and really showed the thought put into the dishes by the chefs. All food was fresh and beautifully presented on the plates and came from the kitchen in a timely manner. Pricing for a place like this is always on the high end but this is one experience where I can strongly say the price of admission is worth the food and service. A must do for a great night out.

Pro Tip: Be sure to make a reservation at least a week ahead. Although we made a reservation on 8:00 pm, it still took us 30 mins waiting to get a table.

**Ankimo : My all time flavor for monk fish liver! Yummy with Ponzu sauce. The Ankimo just like silky tofu melting in my mouth.
**Tempura: My bf is a big fan of Tempura. Thumbs Up for the assorted tempura plate. The crispy skin of the tempuras was right on the spot.
Hightlights of Nigiris:
**Otoro (fatty tuna belly): delightful!!
**Marinated fatty Tuna: The heaven!!It melting in my mouth as soon as it touched my tongue.
** Amaebi (raw sweet shrimp): Love the sweet taste of the fresh shrimp
** Hotate (Scallop): fresh, smooth and juicy
** Uni: they serve the uni from Maine, sweet, tasty but less flavorful than the Santa Barbara Uni or Hokkaido Uni
Dessert:
We end up with the Tamagoyaki nigiri as our dessert. The housemade Tamagoyaki was delicious and puffy.

Kashiba offers some excellent sushi options and a few izakaya-style dishes. The sushi were amazing – fresh fish, perfectly cooked rice with just the right amount of vinegar, served with great presentation and attention to details. Simplicity at its best. The comfort food was good, but pale in comparison to the sushi experience.
The restaurant is definitely not cheap, but it left us with an impression of a pretentious place: simple matcha salt was presented by our server as an extraordinary seasoning. Will return for the full sushi dinner experience despite the pompous service.

Great sushi in a great port city. Omakase is the way to go and the sushi bar is the place to sit. Order until you cannot eat anymore. If you don't prefer something, let the chef know up front. If there is something you prefer, ask up front so you receive it before you get full. If you want the best, let the chef decide. He will give you what is most fresh and in season. They are super accommodating. My favorite dish was the uni hand roll - It was recommended by the chef as it was the peak of the season and local. Wine list filled with a lot of good affordable bottles (along with high end options if that's your choice). In addition to omakase, we ordered the geoducks which were out of this world. Expensive, but would definitely go back for a special occasion. ⭐️⭐️⭐️⭐️⭐️

Hands down this is the best sushi you can get in Seattle! If you've never been here, I recommend sitting at the sushi bar (if you can) and the chef will serve you omakase style. You can tell them in advance what you don't like and they will skip it. For example, we did not like chewy texture so the chef skipped the razor clam, octopus, squid... for us. You can also tell them when you're getting full and they will slow down and ask how many more pieces you want. It could get really pricy, expect about $200 per person including drinks and tip.
The fish was so flavorful and fresh. We were blown away by the fatty tuna's cheeks and the salmon, probably gonna skip the uni and red tuna next time.

Kashiba specializes in nigiri and omakase style courses. Our course was the best nigiri of my life, the flavors were paired perfectly and I dont think I've spent so much time or had as much fun anywhere else. Kashiba is a high end restaurant and you get what you pay for. Our server was very knowledgeable about the fish and the restaurant, we had a great time and if you're looking for a once in a lifetime omakase experience Sushi Kashiba is the place to do it. I also forgot that it has a great view and is right above pikes place.

Beautiful restaurant and GLORIOUS sushi! Excellent, subtle service. Do NOT expect to be served the American style rolls, which can be very extravagant. Kushiba-san serves Japanese style sushi: very, very simple and straightforward, but of stupendously superior quality and freshness. I usually dip my sushi in soy and a bit of Wasabi before eating, but these selections (I had the omakase) were so perfect exactly as chef served them that I only used the soy with the fried head of shrimp.
I do recommend the omakase - chef's choice - especially if you can sit at the sushi bar. One thing that is nice is that chef makes sushi for you at a measured, relaxed pace, and when you are full (I suggest stopping just a bit shy of "full"), you tell him and you're done. I wasn't sure beforehand if the omakase was a set number of pieces or not, and Kushiba-san very kindly explained it to me.
Yes, it is pricy - our dinner was about $180 for two (including 1 small bottle of chilled sake, but not including tip). My sister ate agedashi tofu (again, perfectly done, which I also consider when rating how awesome a sushi restaurant is), the poke, and maybe five pieces of sushi. I had maybe 15 pieces of sushi (and they are served as singles, not as a pair of toro, a pair of hamachi, etc.). However, I think it was very well worth it, especially since we lucked out and we're blessed to sit at the sushi bar with Kushiba-san himself serving us!

Oh my god. This experience was a revelation. I have never had sushi like this. The fish literally dissolved in my mouth. I have never had raw fish like this in my entire life. We had omakase at a table, which is not as good as omakase at the bar with chef, from what I understand. I will have to return to experience that. This is not a cheap dinner, but it is so worth it. This place may have ruined all other sushi for me. I don't know how to convey how delicious everything was. Everything was divine. The service was wonderful. The fish was buttery beyond belief and the rice was on point. The variety was really great and I loved being able to experience all different types of seafood. I even got to try some things I'd never tried before (like raw shrimp, which was amazing). Everything was perfect. This may have been the best dinner I've ever had! My favorites were probably the albacore, tuna hand roll, crab, unagi, and dessert tamago. Highly recommended at LEAST once.

Best sushi I've ever had. Inventive without ever trying to hide the flavor of the fish, only perfect it. If you ask, they probably have any drink you want even if it's not on the menu. I asked for and received a glass of the best plum wine I've ever had. If you are looking for fancy rolls, this might not be the place for you, but if you trust some of the best sushi chefs in Seattle to give you nigiri from heaven, you will dine like a king.

Kashiba delivers a sensational sushi experience. I arrived 15 min before the restaurant opened on a Tuesday night and found a short line of folks waiting. I was greeted and given a seat at the sushi bar. The service was perfectly professional and the atmosphere was crisp understated elegance. I thoroughly enjoyed the chef’s chosen sushi meal. The presentation and description of each piece of sushi was amazing as was the taste. The only downside was the bar had run out of my drink choice but otherwise a perfect meal.

We got the Omakase (chef menu) and it's really good! Make sure you make a reservation is you are not sitting at the bar, unfortunately if you want to sit at the bar where the chefs are making sushi, you can only do walk-in.

We wanted to get Shiro himself. He works M/W/F/Sat and does two seatings of six people each. First seating is at 5pm, second is around 6:30-7pm. We started waiting at 3:30pm and barely made it into the first seating. Watch out, we thought we were 2nd & 3rd in line, but the guy in front of us was holding a spot for 4 people who suddenly showed up last minute. The sushi was the best I've ever had. The whole experience was very fun, and I loved seeing all my pieces prepared. I think Shiro goes a little heavy on the wasabi though. Overall, worth it!

I'd only ever had sushi from strip mall restaurants before coming here. If that is what you're used to, and are expecting to gorge yourself on a sushi boat with spicy mayo rolls and expecting a vat of wasabi and soy sauce, you'll need to shift your expectations.
I came here with friends. We had a reservation. We were seated promptly. We all ordered the omakaze. We were served in 7 courses, with the option to add more (at additional cost). When we went the omakaze was 110 per person. Each course is impeccably presented, and delicious. Each course also looks like there is no way you could possibly be full at the end, but I was satisfied at the end without adding courses, and I'm a big eater. I wasn't stuffed, but not hungry.
The service is top notch. Our needs were constantly attended to without disruption.

This place is outstanding. We had the chef's selected dinner and plate after plate of amazing sushi just kept coming out. Nigiri salmon, tuna, shrimp, eel, oysters, flounder, different cuts and prepped in different ways. It can run over $150/person though, but if you can afford it well worth it. Incredible service as well from every staff member and server we encountered.

Came here on a Tuesday night with probably only a 5 minute wait before I was seated at the sushi bar. The tables were completely full, but the cocktail bar was completely empty. The location is slightly hidden, but it's right by Pike's Place.
I watched Jiro Dreams of Sushi a few months back, so when I heard about this place I dreamed about going. Lucky me I happened to visit Seattle and get to experience it so soon!
I did omakase for around $70 (you can choose whenever you want to stop - for me this was about 12 pieces of sushi in and though I would have loved to keep ordering more since I was nowhere near full, I was on a budget). Wonderful, friendly service!
I've never been anywhere like it. Definitely felt like a once in a lifetime experience, though I definitely want to come back one day.

You'll come in here and see the line. Don't be put off by it. It's worth the wait and the money. Shiro Kashiba originally worked at Shiros in Belltown until he went into retirement. He found himself bored and opened Sushi Kashiba a few years back. He is one of Jiro's (the world famous Jiro out of Japan) first disciples.
The sushi is fantastic. So fresh. So good. You have to try his famous black cod. Exquisite. The chicken karaage isn't bad either. I'm not a fan of sweet shrimp but even here it's done extremely well. Unfortunately, he couldn't make me like Uni, but that's alright. The eel is great too. Every piece turned out awesome. Very full although my wallet wasn't after this dinner, but definitely satisfied and worth experiencing at least once!

What a wonderful and special experience! We came to celebrate my brother's birthday and our experience was truly unique and magical. The food was absolutely stunning and delicious. Each course was flavorful, beautiful, and we'll balanced. We were also pleasantly surprised by the superb knowledge and kindness of our waitress. My brothers finance is unfortunately allergic to shellfish and that has morphed into her avoiding fish all together. Our waitress was able to provide details about each dish and make recommendations that not only were delicious but most importantly kept my future sister in law safe and comfortable. Sometimes I prefer table dining over omakase because it's annoying to be seated next to some insufferable Instagram idiot. Per person it can easily run $150+ before drinks/dessert (still affordable compared to LA/NYC prices)

I cannot believe this place, the food is amazing, top sushi place in Seattle for sure. Shiro (chef Kashiba's previous store) is also very good, but you don't get to see the legend in person. If chef Kashiba is in store, he will greet you in person. Very friendly service, superb food and location.

Very good sushi but quite overpriced for the overall experience. Staff (especially the host/hostess) are condescending. The whole process of making a reservation and the manner in which the restaurant interacts with patrons is unsavory and off-putting. Comparing this restaurant with Sushi Nakazawa in NYC (also mentored by Jiro) really illustrates the shortfalls of Kashiba. Won't be returning.

Mindblowingly good sushi. Amazing quality fish, wonderful service, and delicious cooked dishes too. Whether you do omakase or order a la carte they ensure the food is brought out in a thoughtful order and explain the best way to eat it to enjoy each piece properly.
(We have been here before for their omakase but most recently ordered quite a selection of nigiri and the black cod).
We didn’t have a reservation and arrived around 30mins before opening to meet a queue of ~15 people (this was on a Wednesday). They only seat ~8 people at the sushi bar at a time - so if your aim is to sit at the sushi bar, arrive earlier than we did! That said, they had plenty of seating for those who were in line without reservations - including a nice outdoor patio. I wouldn’t turn up after they open without a reservation though.

Waited in line for the chef counter omakase and it was incredible. The service was outstanding. They kept a close eye on us to make sure we always had a full drink and no trash left on the tables. Sushi Kashiba is an experience. The service is impeccable and attentive. The quality of the nigiri is 2nd to none. The toro and o-toro I had was the most buttery melt in your mouth sushi I've ever had.
Don't bother with the sushi rolls. They're ok, but you're better off with nigiri.
The miso braised black cod is fantastic. The yellow tail collar was perfectly cooked. The poke appetizer was head and shoulders above any other poke dish I've ever had. It tasted so clean and balanced.

Yes this place is expensive, but you are paying to have some of the best sushi in Seattle. And the amazing experience. I came without a reservation and they were able to Seattle my friend and I in. We also ordered tempura, which was amazing. I recommend getting it as an appetizer. The atmosphere is very elegant so it may be good to dress nicely. Overall though 10/10. One of the best experiences I had in Seattle.

The quality of the food has not changed (excellent) but everything else has. If you sit at the bar and choose the $160 a person Omakase you are not allowed to order anything else off the menu. Why? because it moves the patrons along faster? If you have a 7:00 reservation you need to check in at 6:45 to let them know that you are serious? The general manager Steven needs a 4 day customer service intensive. Hope that new management comes in sooner than later. Such a great resteraunt damaged by mismanagement. Hopefully not irreparably.

Do yourself a favor and treat yourself to the full omakase. It was something like 12 rounds of the most incredible food I have ever tasted. It wasn't just sushi; everything from the starter courses to the "break" course they give you between to give your taste buds a reset...it was all so high quality and mind-blowingly delicious that we really forgot we were super late for a movie!
Yes, the prices are steep. Much more so than the other omakase I usually go for at Shiro's. But without a doubt this is the best sushi I have had on the West coast. You will not regret splurging on this.

Omakase - "I trust you". Trust your chef. My gf treated me to the best meal of my life when we visited Seattle. I lived in Japan and this is the best sushi I've had. We were first in line for the sushi bar at 3:30 pm, since you can only reserve tables (and trust me you'll want the sushi bar). The chef was not only skilled and amazing, but friendly and fun, in the end we ate 32 pieces of sushi each. I finally reached out and tried some things that terrified me, like uni (sea urchin) and prawn heads. If you're squeamish it might be difficult, but just close your eyes and trust your chef. Unfortunately we didn't get to eat with Kashiba-sensei, but Ben-sensei was fantastic too.
While the attire is casual and the atmosphere relaxed, like sushi is supposed to be, the wait staff is attentive and professional as if in highest class of restaurants.

I'm a big sushi fan. I saw Jiro dreams of sushi. So when I had a chance to go to Seattle, I made it a point to go to Sushi Kashiba as Shiro Kashiba is said to have trained under Jiro. I headed to Pike Place Market once I got off the plane. I was first in line outside the restaurant at 3pm, so I had my seat at the very end of the sushi bar where I had a clear view of chef Kashiba preparing omakase at 5pm.
I had omakase at Nobu many many years ago when chef Nobu Matsuhisa himself was behind the counter. It was amazing. This, was not.
The fish was fresh, presentation was good, service was excellent. But while chef Kashiba was informative and entertaining, I saw him pick up his knife ONCE to prepare geoduck. The rest of the omakase was him reaching into the refrigerated case for pre cut seafood and arranging it on rice. On the usual 1-10 scale, I give it a 7 at most. Pricey doesn't describe my bill. Think DOUBLE what omakase would be in Japan.

I will say if you get a chance to do the Omakase you absolutely should. I can easily say this is the best meal I've had. The service was amazing, the food was all delicious. The sushi was all perfectly prepared and seasoned. Fish I'm usually not thrilled with I ate with gusto, because they do some culinary magic that I as a mortal can not understand. I also can not thank everyone enough for taking such care with my shellfish allergy!!!! You made it so special with all the changes, and the fact I did not have a single reaction completely made my night!!! (usually some sort of contamination happens when eating at any place that serves shellfish so I keep benadryl or an epi pen handy). Either way I can not express my gratitude enough for making this experience so amazingly, but truly thank you!

Best sushi and sushi experience I’ve ever had. We didn’t get to sit at the sushi bar but the service was still exceptional. We did the omakase and a bottle of sake and it was well worth it. Proof of vaccination and ID is required at the door. Felt like I went on vacation to Japan. Definitely the experience I was looking for and met all my expectations. I was served by Chef Kohta! He is my favorite sushi chef by being so friendly, allowing me to ask him questions, and he even asked me questions! I genuinely felt like a guest at someone’s home.
Let’s get to the sushi served… I was MIND BLOWN!!! I’ve been to a handful of omakases, but the selection of fish at Sushi Kashiba is on another level. The fish melted so soft in your mouth, every piece prepared I was mouth watering before I ate the piece. I was introduced to different grades of tunas, salmon, white fish, sea urchin, and eel. I learned a new language from the range of textures and flavors I experienced!
I would 1000% recommend this place if you’re even curious or genuinely love sushi. You’ll find something to appreciate from the hospitality to the food to the memories.

Often times I dislike “fine dining” because I find myself constantly saying “thank you” and forcing over-politeness. This is not that place - the food and ambience are top notch, but the interactions are casual and comfortable.

Past that, I appreciate the tipping model at Sushi Kashiba. Even though we tip extra every time, it’s nice to know that staff is well compensated for being as excellent as they are.

The quality of their fish never disappoints. This is easily the best sushi place in Seattle. The previously location,Shiro’s was also quite good. They have a really nice enclosed outdoor court yard patio if you would like to dine in. Otherwise the bento box is superb as well - great selection of seafood with ice packs to keep the food fresh for your journey home. Remember to order the bento in advance because they sell out very quickly! Parking in downtown Seattle is a little tricky but it’s definitely worth it.

This place is a MUST GO!! Make sure to make a reservation as early as possible (I made mine probably a month in advance) - and also specify if you want to sit at the bar or you will have to get lucky.
The omasake here is one of the coolest culinary experiences I have had to date. The Japanese whiskey and sake were also a great pairing for this experience - service was outstanding, everyone was very knowledgeable.

Decent. I expected a bit more variety in fish selection when ordered an omakase. Slight disappointment toward mid-end. Go visit here if you are visiting Seattle first time. But certainly try out other hidden gems in Seattle and neighborhoods if you have time. With a lot less wait time, you can experience similar experiences in many omakase places offered by extraordinary chefs in Seattle.

We arrived to Seattle at 4:30 and took the Uber straight to Sushi Kashiba to stand in-line for a 9pm counter Omakase dining time. It’s was on a Wednesday and the line was already wrapped downstairs hoping for a last minutes same night dining. Our friends are local and have been raving about this spot forever, so we knew we had to make it a priority to hit this on our first night and kick off our Seattle trip on a high note.
As soon as we walked checked in at the door, the waitress took our drinks order so when we sat down, they were ready waiting for us to dine and drink without skipping a beat.
We both had omakase for $160 (18 pieces) and my husband elected to add 3 pieces at the end for $30 more. We’ve dined omakase in both the US and Japan and the meal was a pretty standard transition with mildest fishes first to strongest last. Chef Hiro was our chef and he was super interactive and talked to us where the origin of each piece. Love every single bite that we had and have been raving about the quality of the fishes to everyone. Will certainly come back whenever we’re in town again.

We got the delicious 21 course omakase for $110. I typically don't like shrimp sushi, but it was actually delicious here. Maybe because they fried the head and encourage you to eat it. The quality was fresh and flavorful. Kashiba was present during our visit. Super excited to be served delicious sushi by a local legend.
Our server was also very knowledgeable and attentive. We ordered sake as well as the terroir Collins and high ball which I was a huge fan of. Will definitely be back!
You'll have to call the restaurant to make a reservation. I left a voicemail and was called the next day to book our dinner reservation 1 day later.

Since this place cane highly recommended as having some of the best fish in the states I elected to go for the Omakase. This is a seven course dining experience that included 10 different types of fish and shellfish. Seattle has many great dining establishments. Service was excellent right from the get go and this was without a reservation. Door staff and servers were on point during weekend evening hours and did not miss a beat while still having time to answer questions and give recommendations.
Servers also had their own support staff bringing food out and refilling water when needed. Plates were taken away and our table was wiped down appropriately. No need to wait forever for one server to do everything.
Shiro was also present watching over the restaurant from time to time.
Okay so great service, how was the food? Amazing including the rice and sides. You don’t have to deal with a cluttered table or fret about wasting food. The ginger and wasabi provided were fresh and we were given just the right amount.
Rice came out perfect for all orders and all pieces of sushi were very fresh. Servers were also very accommodating with alcohol and will cater to your preferences.
Compared to Shiro’s which no doubt was also excellent and delicious, Sushi Kashiba felt more comfortable for my first time eating here. I recall the service and food at Shiro’s being very good but Sushi Kashiba felt a slight step above. I will have to try both again and update the review in the future.

I had the chef's counter omakase experience. A great experience and some of the pieces were delicious. But some of the pieces, like the fried shrimp head, and some of the smoky nigiri were not my favorite. Also, there is nigiri after nigiri which gets a bit tiring and makes you too full midway. Wish there were other kinds of appetizers and dishes in between to make the meal more enjoyable. Delicious handroll, salmon nigiris, and tuna nigiris though!

This place has the hookup on sushi grade fish, I have been to many sushi restaurants all over the United States and I have never tasted fish this good. The way was prepared and presented was a masterpiece by a master sushi chef. It is pricey, however I think the money is well spent because you will notice the quality the second you take your first bite. If you go here be ready for one heck of an experience with sushi. Enjoy

We had the omakase and it was amazing! The items were fresh, delicious, and carefully curated to compliment each other. They also delivered them perfectly timed to let us savor each offering without feeling like we were waiting too long for the next plate. The bluefin tuna handroll is my new all time favorite, the scallop nigiri had a deft touch of wasabi that elevated it to beyond wonderful, and I even enjoyed the geoduck, which I usually find to chewy for my taste, and they were even able to accommodate my "no salmon" request. So many special little touches made this meal so memorable that it's hard to describe them all. Just go to Kashiba!

Docking stars because I don't like the reservation policy at sushi Kashiba. I had a reservation for 5 pm one evening and I arrived well before time for my table. The restaurant had not yet opened for the evening. At 5 pm instead of prioritizing me (the person with the reservation), they allowed in the walk-in guests for the omakase experience. The omakase experience with Chef Shiro is what I was also interested in. I did manage to grab a table at the sushi bar. But the table was right opposite the kitchen and not the one Shiro was attending. Prioritizing walk-ins over those with reservations is unfair policy. If you don't take reservations for the omakase experience, it would be great if the management made that transparent on the website.
I loved the food and it is definitely the best sushi in town. I hope the management can straighten out their reservation policy so that I can return to dine again

We had chef Saki. He noticed I ate with my left hand and then placed my sushi left to right. I appreciated his attentiveness. He explained what he served and chatted with us. The fish we had melted in your mouth. Simple, yet each ingredient highlighted the fish. He always had a smile on. Chef Saki deserves much praise as he was trained under the best!
If you don't get full from sushi like me, be prepared for a decent bill. It was worth it for excellent service and delicious sushi.

Forget avocado, forget rainbow rolls, forget a lot of things when you visit this place because they aim to give you an authentic Japanese sushi experience. I don’t know, at least that’s what the waiter told me. In any case, I ordered the things that most closely resembled one of my favorite rolls (salmon, salmon, and more salmon...oh and Spanish mackerel). The fresh fish was of extremely high quality and felt like silky, tasty, wild caught, real fish. Makes me wonder what is it most other places are passing along as fish? The place is small and gets super crowded quickly so the seating arrangements wherever you sat weren’t the most comfortable, but well worth the discomfort. Don’t plan to hang out. Bit pricey, but again worth it. Staff very friendly. Would do it again for sure.

I went into this experience with low expectations, as Shiro's which we tried last time I was in town was incredibly mediocre. Boy was I blown away by this place. My girlfriend and I had the sushi dinners which at $75 and $85 dollars were one heck of a bargain. We got several courses which included appetizers, salads, several rounds of nigiri, and some fun extras. We left full and felt like the prices, albeit high, were entirely justified. The fish was so fresh I couldn't believe we weren't in San Francisco or Tokyo. It rivaled the best sushi I've ever had and I believe the Toro we had may have been the single best thing I've ever eaten. The land and sea cocktail was also a must try if you're into sake. Overall despite a nearly $300 tab with dinner, drinks, and the required 20% (totally worth it, service was incredible) we both left elated and excited to return.

Got in line at 4:45, a bit later then you should. Waited for the 9pm seating at the chefs counter and it was well worth it. Opted for Omakase and let Chef Joel lead the way. He was awesome and provided a perfectly curated experience. There were so many highlights and fish I thought I didn’t like was amazing here. It’s understandably not cheap and for two our bill was a bit over $500. I highly recommend this place and suggest you experience the same way my partner and I did!

Let's cut to the chase: this was hands down the best sushi I've had in my entire life. End to end, my experience at Sushi Kashiba was incredible. The food, the staff, the attention to detail, the personality, everything about this restaurant is done with exceptional taste. Without hesitation, go all the way and order the Omakase from here, it's 100% worth the time and money.
I'll give you two pieces of advice before you have your life changed here. 1) Chew SLOWLY. Savor each heavenly bite -- get too greedy and before you know it, your Omakase course is suddenly gone. 2) Know how to PROPERLY eat sushi. This is especially true if you sit at the bar in front of the chefs. Really think about this one, it's just a YouTube video away.

We showed up at 4:30 and got the very last seat at the bar for 6:30pm, the people behind us got offered an 8pm seating. I'd recommend getting there sometime between 4-4:30 if you want to do omakase, because if you do omakase you NEED to sit at the bar. I'm not kidding, don't even consider doing omakase at the table. It's a completely different experience. It was without a doubt worth the extra 1 1/2 hour wait to sit at the bar. You can't make reservations for the sushi bar, either. First come first serve. By the time we came back to check-in (around 6:15) they were turning everyone away because they had already filled up for the entire evening.
We didn't have Shiro, but I absolutely LOVED our chef. He was easily the youngest person on the team but I asked him and he said he had been a sushi chef for 8+ years. I ate through 27 rounds of sushi and could've eaten more, but it gets expensive quick :).
We had the chef pick our fish for us - highly recommend this because you'll get to try a little bit of everything. The highlights were the toro, the toro hand roll, and omg.... some kind of smoked salmon belly. Wow. I've never had anything like that and it was EASILY the best piece of nigiri I've ever had.
I highly highly recommend this place, and before you do it watch the documentary Jiro Dreams of Sushi so you can understand the art of perfection that Shiro has mastered and instills in his restaurant.

Food is fantastic. Sushi is incredibly authentic, although the atmosphere is definitely Western fine-tuning. If you don't eat sushi (like me) but end up here with others, the chicken karaage is the best I've ever had and the agedashi tofu is incredibly tasty. There is also an all-vegetable option for the tempura. The staff are amazingly friendly as well.

Unbelievable experience. One of the best if not THE best omakase experience I've had in my life. I was recommended to come here by some other sushi-loving friends of mine who told me that they had an unforgettable meal here. I'm always cautious about going to a restaurant that's been hyped because I often get let down, but Sushi Kashiba was one of the few instances where I felt my experience exceeded my expectations. My boyfriend and I along with two other couples were served by chef Ben at the sushi bar. Ben-san was extremely skilled, accommodating, and humorous. He explained every item he served us and I loved that a lot of the seafood was local to Seattle, which is part of the reason why all of the fish is so fresh and delicate. We had so much fun chatting up the other people in our group, joking with the chef, and we all ate as much as we could until one by one we had to tap out because we were dying from nigiri overload - which IMO is not a bad way to go.

Took a friend to celebrate her birthday. We both really enjoyed the experience and I recommend it. Reservations are tough but we were able to sit at the (drinks not sushi) bar. We were fortunate because Keenan was running the bar and made the experience very special for us by providing a rich commentary on the food that we were eating. He's great. We had the omakase and I plan to return as soon as I may and eat another.

Had a reservation and was seated immediately. We ordered omakase and had about 15 pieces of nigiri along with a few plates of cooked food from the kitchen. All the fish tasted fresh and a lot of them were melt in your mouth good. I would definitely recommend trying the fatty tuna/poached fatty tuna if possible as that was the best thing we had.

Wonderful little spot, thankfully I got in for dinner by myself. Famed sushi artist did not disappoint. The sushi was excellent and there was a massive selection of fish. I hadn't had some of the cuts, wonderful. The reason I am subtracting a star was for slow (but friendly) service. I had to order a beer twice. Also the roll was not that great, avoid the rolls stick to the sushi.

SO grateful we got to experience the omakase while visiting the area. Even though Tock didn't show any options, there is an option on Tock to email the restaurant directly to see if open spots. I gave a range of dates and times we could do. Restaurant responded within 24 hrs and emailed with an opening within our range! Chef Shiro personally greeted everyone at the door and he was buzzing around the restaurant. He was so nice and funny too! Great staff, experience and space. Definitely repeating when we return!

I was visiting Seattle one year and was highly recommended by a friend to try out Sushi Kashiba. This restaurant is opened by Shiro Kashiba who was classmates with Jiro from "Jiro Dream of Sushi". This was also my first time having omakase in my life and I loved and remembered every bit of it. It was here where I've tried for the first time, tasting the superb quality of sushi made in the traditional Japanese way. Not only do you taste the freshness of the fish but how perfect the rice was made. Unlike any other sushi rice you've tried in your life, you can taste each and individual rice pieces in the sushi. Words cannot describe how perfect this experience was, so I highly recommend this to anyone in the Seattle area.

Truly top notch service and sushi. Been stuck ordering OMAKASE as its the most delightful and surprising choice for sushi lovers. This option is not for the faint hearted, expect to be eating for a while. Cocktails and other food is fantastic as well, so if you are not that hungry pick from rest of the menu. Not to miss, and highly recommend it. Yes, the wait can be long, must make reservations... and as I say - Amazing sushi comes to those who plan ahead!

Best SUSHI i have ever had. No comparison at all. I didn't feel rushed, starved, or berated (like I have at other fine dining in big cities). This place is legitimate. Food is fresh, waiter is great (with lots of improvisation with his manner, jokes). Because of the amazing sushi (which is about two weeks ago), I still compare every piece of raw fish that I have had since then to the sushi. And nothing comes even close.

We had such a great night from the very warm reception, to a comfortable and relaxed finish. Jordan provided impeccable and knowledgeable service with just the right amount of humor and engagement. It's rare to leave a fairly pricey restaurant disappointed that you could not tip more due to the inclusive tip policy! The food is excellent; beautifully presented and absolutely delicious. I really enjoyed the pacing of courses and the flexibility of allowing additions big or small. The only small point I would pass on is that at no point from booking to finishing we're we asked or really had the chance to say if we were celebrating something. I don't want a sparkler in my sushi, but just saying happy birthday really adds an extra touch. Great night though, thank you!

In an age of instant sushi, it's difficult to find a sushi restaurant offering quality and thought in what is presented, at least in Central Florida. Finding Sushi Kashiba was an unexpected treat. We were lucky in that we were seated immediately without a reservation. From there the service and Omakase were incredible. This is an experience I am so glad to have had.

Arrived at 4 on a Sunday and we're first in line for the bar. The number 2 seat from the wall is the best seat by far as you can see all the chefs work throughout the night. The sushi was absolutely amazing and the Omasake experience was well worth the price.

After reading reviews, I decided to give this a place a try as I was overnighting in Seattle. I was excited to try this place! Unfortunately I can not recommend this restaurant to other people.
I ended up ordering the sushi set menu (peak), but every nigiri lacked flavor except for the Uni. Pieces were pretty bland. For people from Hawaii, the nigiri was no different than Ninja Sushi in flavor which is not the comparison this restaurant wants. Sure, more unique fish than ninja sushi, but the inability to highlight or bring out the natural flavor is disappointing. Never had I ever had a fish bone in my sushi before either, and this was the first time. Thus the food I do not recommend to anyone coming to Seattle as this is apparently one of the best. If this is the best, the bar is set low for Seattle.
For people from Hawaii, this place is not at the same level as Sushi ii, Sushi Sho, nor Sasubune.
Now the good: the service was excellent from the host/hostess who checked jackets and bags, and to our server who was spectacular.
In conclusion, save the money and dine somewhere else and leave the sushi experience for another place.

Ate at the restaurant last night. We have experience with many excellent sushi restaurants including Sushi Ota from our native San Diego as well as visiting many Nobu restaurants.
The food was good to very good. What really puzzled me a lot was the fact that much of the fish was pre-sliced which was very apparent to me from my vantage point at the sushi bar.Some quick research on this practice indicates that good but not great restaurants increase the pace of sushi making with this method. With that being said the atmosphere was very nice and we had a pleasant evening.

An otherworldly experience. Besides it being a beautiful, cozy restaurant nested near Pike place market, the sushi was transcendent. We had omakase, and the chef delivered piece after piece of exquisite sushi. Each was different from last, and offered a new unique flavor or texture. From sea urchin sashimi to herring roe on kombu to seared king salmon belly to blue fin tuna, nothing failed to excite the palate. Service was also impeccable, and the servers worked with the chef to offer a seamless experience. While pricy, all around a once-in-a-lifetime experience.

I want to give this place a 5 star but I just cannot, considering that this was indees the best sushi I have ever had. My bf and I decided to drop in on a Sunday night and were immediately seated at the sushi bar, not having ever heard about this place before we were told right off the bat to order the Omakase. I ordered 2 one for myself and one for my bf, having Omakase before I had made the assumption that there would be a limit as to how much the chef would give you but boy was I wrong. It seemed that we were receiving sushi at an alarmingly fast rate not that I was complaining but we were sitting next to a couple who had clearly been there longer but weren't receiving nearly as much food as we were. 56 peices of sushi later, a beer and a crab and egg custard later and the only reason I had stopped was because my bf was full the bill ended up being almost $500. The service fee was 20% and the tax was about 45% Maybe I'm just a glutton but that was just so expensive for how much we both ate the service was spot on and the chefs clearly enjoy what they do but the price was what killed me maybe I'll come back when I have a bare minimum of a mill in my wallet.

I don't know how they do it, but the sushi here is on another level. Try the Omakase and have your chef feed you piece after piece of amazing sushi. Be warned - the lines for the sushi bar are ridiculous - it's advisable to get there at 4pm if you want the first sitting.

Get the Nigiri. It's some of the best I've had. The sushi itself was maybe a 6/10. Bartender was very knowledgeable. But there was too much of an arrogance to him. We ate one roll of one of the sushi rolls we ordered and instead of him asking if we enjoyed it, he just simply picked it up and knew we didn't like it but didn't care to ask why. Recommend going, just order the Nigiri.

Tucked away within an inner courtyard Sushi Kashiba offers some of the finest sushi in this city with a backdrop design of sleek lines and bold colors. The hostess was friendly and courteous. We sat at the main bar where we were served by an incredibly knowledgeable bartender who taught us everything from different types of fish to what makes a Veltliner (white wine) unique. Every recommendation he made regarding sake was spot on. Arrive a bit early for a quieter experience, and later to feel the expansive energy of this venue.

The fish here was fantastic. I don't like Wasabi, so there was nothing for the fish to hide behind, and it was truly fantastic. They had a lot of unique fish on the Omakase menu which you don't see anywhere else. The fatty tuna and salmon belly melted in your mouth, but the stars for me were the medium fat Tuna and the Eel "dessert" at the end. Note that this does get expensive, but it's worth it. With two glasses of wine, 23 pieces of fish, and the included tip, the total came out around $212.

In short: despite being almost a $500 dinner, it was absolutely worth every bite, it was a dream come true to be able to experience it, and I would dine again in a heartbeat.
My fiancée and I arrived at our 9pm reservation and were promptly seated. Long story short, the service was world class. From the hostess to our waitress, they treated us like royalty and made the experience truly remarkable.
We ordered Omakase, or chef’s choice. This is where you don’t know what you’re ordering and your dinner is under full control of the chef depending on what’s fresh that day. We decided to do the same with sake to have a beautiful pairing with each dish.
(After we ordered, we noticed that chef Kashiba was actually cooking tonight, and we snuck a video. He may be 90 YO but he’s still kicking and his sushi is killer. To see him in person turned me into a giddy school girl.)
Each and every dish were all immaculate and I have nothing but amazing things to say about all of them. Though, some specific callouts would be the miso soup, the sweet egg with gravy, the tuna, the prawns, and the eel (we ordered extra). We added some oysters as well. Some specialties included were Uni (sea urchin), seared duck, and tuna sashimi salad.
Again, the tab (with tax and tip) evened out to almost $500 for 2 people, which hurts. But if you cool it on the sake and don’t order add-ons, you could walk out of there spending no more than $250 (when we got the bill we saw that one of the glasses of sake was $50 each! Careful!)
That being said, again, I would return in a heartbeat. Not only was this the best dinner I’ve ever had, it was the best experience I’ve ever had.
A once-in-a-lifetime experience like this is priceless, and I’d pay double to do it again. Not only was it a world-class dinner, it was my dream materializing in front of me and becoming all I ever hoped it to be. Unfortunately I walked out of there with the sinking feeling that nothing I’d ever experience after this would compare, but hey, I guess that just means I have to come back. And that’s cool with me 😊👍🏼

Sushi Kashiba is located perfectly partially secluded within Pike Place so as not to take away from the experience, it's quaint and intimate but not crowded. A pleasant buzz fills the air, and the upscale environment is just right. I sat at the bar, a feat which takes planning and luck, be prepared to wait a while and I recommend reserving a table if that's what you want especially during the weekend. No reservations are taken for the bar, come in 1-2 hours ahead to put your name on the list. And if you sit at the bar, the only way to truly experience Chef Kashiba's restaurant is ordering Omakase. Which is to say roughly, you're leaving it up to the chef's creativity. I was not disappointed, Chef Kashiba is out going and entertaining, I was served by Chef Suzuki who is equally inviting and good natured. Great skill and attention were exhbited, he puts pride into his work. The sushi was superb, best in the region! He's more than willing to oblige your likes and encourage trying something out of your comfort zone, you tell him how much you're willing to eat and a feast you'll have. The drink selection is just right, all carefully selected to fit with everything available. Be prepared to leave with a much lighter wallet, but don't let it stop you! Sushi Kashiba more than lives up to it's reputation.

Love this place. Expensive but you know that going in. Expect to spend at least $80/person. Slightly cheaper if you order nigiri instead of set, at the risk of missing out on awesome appetizer. I've been here a couple of times and the only things I order these days are fatty tuna, sweet shrimp (remember to eat the fried shrimp heads), and tamago for dessert.

Made a late reservation for a table but got lucky enough to switch to the sushi bar. We didn't get Shiro (come early for him), but James was excellent. The omakase goes until you tell them to stop, and it ran to slightly above $5 per piece of nigiri for us, so be prepared to spend. It's definitely worth it. This was the best sushi experience I've had, and I'll come back for sure. The current record is 48 pieces, so I may try and beat that.

I had a 29-piece Omakase with Chef Suzuki-San, which included had a piece of every fish available that night. Everything but the fried shrimp head was served as nigiri, and it was all both fresh and incredibly well prepared--not to mention well worth the wait, which wasn't too bad. We got there at 4:45pm Thursday night, and after waiting a few minutes we reserved a counter seat for 2 at the 7pm seating time.
Once we sat down, we started off with a few different types of tuna and salmon. After that, we each had a fresh local prawn, (both the tail meat and fried head afterwards) which we got to see live beforehand.
My girlfriend and the duo next to us finished after around 22 pieces, but I kept going to try some of the less common selections, like the excellent seaweed and herring roe nigiri.
Needless to say, I'm glad I did, and regardless of how hungry or sushi-adventurous you are, you'll be glad you went to Sushi Kashiba. Arigatou, Chef Suzuki-San.

Pricy but nonetheless, the Omakase experience was amazing. We had many wonderful pieces, the farty tuna was incredible, the amberjack with yuzu a delight (I will remember this for a while), the tamago tofu in broth with king crab just the perfect bite ... just to name a few. Many of the nigiris were marinate with subtle and delicate flavors. We could not get the bar experience (come early and know a trick - you can sign-up for the bar experience early for a later serving) but even at the table, the staff was very professional, helpful and efficient.

We came here for our 3rd anniversary. The waiters/waitress are friendly and knowledgeable about their food. We tried the chef's special. The portion is great with various sushi, sashimi etc. The seafood is fresh and tasty. We also ordered a chawan mushi that is not included within chef's special. The crab, scallop, shrimp and mushroom all made the chawan mushi delicious. The flavor all mixed together without any conflict. The food here deserves their price.

I've been fortunate to have had sushi in numerous restaurants in Japan (mainly Tokyo but also Kyoto, Osaka and Sapporo) and this was the best sushi I've ever had.
Shiro san is a funny and personable man, he helps to make the complete dining experience.
Every piece of sushi provided a different taste explosion. It started with the "Special Hand Roll"......we went through several salmon selections and tuna selections. Though I can sometimes be a little picky about some sushi, Shiro san made even the more difficult fish (mackerel ) taste superb.
The staff was excellent, they never seemed to interfere with our dining experience.......empty bottles or miso bowls were removed instantly-- they were ninjas that never seemed to be seen. Superb staff.
This was a fantastic dining experience, don't be in a rush, just enjoy the tastes as you probably have never had before.
We will definitely be back. I have no negative thoughts about the evening.

I had very high expectations for this place and boy did it deliver. Shiro is a former apprentice to the amazing Jiro of lore. To sit at the sushi bar, you have to wait in line. They do not take reservations for it, but they do take reservations in the main dining area. The sushi bar holds about 13 people and most order the omakase (chef's choice). That is the way to go. The sushi was masterfully prepared and each bite was so amazing buttery and delicious. Expect to spend about $75 a person just for the sushi, but trust me, it's worth it.

I visited this amazing sushi restaurant with friends after discussing the movie Jiro Dreams of Sushi that we watched on Netflix. Having been to Japan, I've been extra picky when it comes to Japanese cuisine. This place definitely lives up to the great sushi that I had in Japan. Sushi Chef Shiro Kashiba was there at the sushi bar preparing our food to perfection. Their food is a little pricey but definitely worth it! I'll have to bring friends that visit, and may have to go again next week! They have excellent service, fast and respectful. One of my friends ordered one of the Set Dinners, the rest of us wished we did the same afterwards. They serve most of their sushi already seasoned with the perfect amount of wasabi and soy sauce and offer more if you'd like. I really enjoyed the miso soup at the end.

we each got the Seattle - the $75 8+ piece tasting menu - it included a special appetizer, colorful salad, miso soup, and a sweet bite, surrounding the many luscious pieces of nigiri. The king salmon might make you aroused (unless you're a robot). The toro (fatty tuna) yes please. Every bite of fish was just as good as the next - I opted out of the shrimp, and for some reason they also replaced the eel, but when my friend raved about the eel, I asked if I could try it. The scallop was good, though not my personal favorite, and they comped me for the eel, which felt like the nice/right thing to do, and for that I was grateful. It was yum. We each got a cocktail, so I had a nice buzz going by the end.

Great omakase experience, but not the best I've ever had - in fact not even the best on this trip (see Shiro's Sushi). The sushi bar is the place to be and omakase is the obvious way to go. The all Japanese staff is friendly enough, but not particularly engaging. Fish is fresh and nigiri are an excellent representation of traditional sushi tasting (almost to a fault as we would have preferred a larger variety of fish). Sushi bar reservations can only be made in person. Go early and wait for their opening to put your name on their wait-list - you can pick your seating time and they'll call you when your sushi chef is ready for you. Surprisingly, not packed on a Sunday evening at 7:00 PM - walk-ins were able to snag bar seats.

I love Sushi Kashiba!!! This was a dining experience unlike any other. We dined al fresco in a beautiful, flower surrounded courtyard with supberb service. I've spent a lot of time in Japan and have had sushi at some of the best places in the world. These places all serve some super fresh seafood (with the caveat that fresh can and often does mean frozen, but that's another topic for another day), and have heavenly rice that takes years to perfect. But more important is the dynamic of sitting at the bar, and the dialog that evolves between you and the chef. Pieces are made to be consumed in the moment. The chef gets to know you and your tastes and adjusts to pace, preference, mood. Feeling full? Want to try something new? More wasabi? Less salty? All of this is done in the moment.The experience gets better the more you frequent the establishment and grows in value over time.
That is simply not possible at Kashibas. To get a seat at the bar, you must line up, sometimes hours before, and MAYBE you will get a bar seat. Or maybe you'll have wasted 2 hours. This makes being a regular customer at the bar impossible, and effectively ensures that the good seats go to tourists who don't have to be at work, don't have kids, or somehow don't have anything to do during the afternoon. That would be fine if this were a value priced spot catering to college kids, but makes no sense at this price point (for reference you could easily drop $500 plus for omakase for two plus sake at the bar).
So, maybe this establishment doesn't care to have regular bar customers, or thinks it's fine to make them wait for hours, or thinks you should be grateful to sit at a table. No idea which and I don't care, but I've stopped going here and I take my money elsewhere. There are other places in Seattle that happily take reservations at the bar. They will respect you as a customer, come recognize you and learn your tastes, appreciate you, and value your time. It's a pity this is not one of them.

The place is very well appointed with a modern style and well dressed hostesses and waiters, who know how to make one feel special and respected.
A spot at the sushi bar is a rather rare ocurrence, but they do serve the full menu on their regular bar, although you miss the interaction with one of the chefs. If you find this an indispensable part of your visit, plan on arriving earlier than their list cutoffs at 5, 7 and 9 PM, so can get your name on it and have better hopes for a seat right in front of the action.
You can order the chef's special menu, or when you know your sushi, order by the piece.
The Uni (sea urchin) and Toro (fatty belly part of the Tuna) are labeled as MP (market price) so expect to pay a couple more dollars than the priciest piece with a dollar amount, but don't be afraid to order them because they won't be too expensive.
I ordered Nigiri of the two kinds of mackerel, the toro, sake (salmon), uni, scallops, eel, two other kinds of tuna (one slightly seared), and ikura (salmon roe).
The uni and Ikura are served in ceramic spoons with the uni over a little bed of sushi rice while the Ikura is on its own.
All in all, the sushi was amazing. Uni was particularly good for being imported from Japan (as far as the waiter cliamed), and the Ikura was slightly less salty than I typically find it.
The best pieces were the regular mackerel (probably the best and freshest I've ever had), the eel and the scallops. The toro was good too, in fact I've only had better ones at the Nikko hotel in México DF and at Sushi Dai in the Tsukiji fish market in Tokyo.
Sapporo beer was my drink of choice, which they serve in the tall bottle + a glass.
Expect to pay between $70 and $85 for your typical selection of 10 pieces of the best sushi. A 20% service tip was automatically included on my bill in the amount mentioned. Service was kind and courteous, but some of the staff tends to assume you probably know little about sushi.

2 options for sushi meals and 2 options of hot entree meals. Plus omakase. The meals typically comes with rice, salad, miso soup, tempura, tamago as dessert. Omakase is market price. Tonight it was $110. Hot entree choice is either king salmon or miso sake marinated black cod. There are of course a full list of ala carte nigiri sushi, as well as ala carte appetizer and hot entree. The miso black cod is delicate with crispy skin, and it's good but personally it's a bit much of alcohol for me as I can tastes it. Fishes are fresh especially the tuna and scallop. Tempura is well done, much better than typically at other sushi restaurant. Salad comes with seared duck meat which is tasty. Service is great. Folks lined up before restaurant open at 5. Come early or make reservations ahead.

We eat out a lot. This place is probably one of the top 5 restaurant on our list, not just in Seattle, but ever. My husband and I got there shortly after 5 to celebrate his birthday. We were early and lucky enough to get a seat at the sushi bar. Ordered the omakase and clam miso soup. Before any sushi arrived, the miso soup came and it was amazing. Not too salty, got some juicy, non-sandy clams, just prefect.
When the sushi started coming is when the fun begins. We told the chef our preferences and he just went to town! First bite, we knew we've come to the right place. Perfect rice, fish, portion, temperature. You can really tell the care and craft in eat piece. We also were fortunate enough to sit next to some very nice people, which is always a bonus when sitting at the bar. I could rave about everything but I don't think my words would do them justice. It's busy, it's a long wait if you go late, but it's worth it.
And the price, honestly, not cheap but not as outrageous as you'd think. It's worth every single penny. The food, the service, the ambiance. Perfect place for a special occasion.

Pricey, yes. Overpriced, no. Not a long wait on a Sunday night but definitely worth it if there were to be one. Highly competent server and expos, just impeccable high-quality food. Probably the best high-end sushi restaurant in Seattle area.
A Toaster
The service is out of this world. For kicks and giggles we deliberately tested the waiters by having one of us drink our entire glass of water and wait. Without fail, someone noticed and refilled our glasses within 30 seconds. Dumb test, I know, but if they care that much about water glasses I can promise you it scales to the big picture here.
This isn't a restaurant, it's an experience. Do your best to internalize that, because otherwise you may weep from the price tag unless you practically have money growing in your backyard.
Do what most recommend here: the omakase. Expect to spend somewhere in the early $100s for the basic course pre-tip, but don't be surprised if you find yourself asking for it to continue. We came here in a group of three and the whole meal (which we extended) ended up costing $530 post-tip.
You'll feel a little out of place if you don't dress up just a tiny bit. I'm not talking ties here, just something better than shorts or sandals.
Lastly, if you want a reservation, you'd better be calling at least a week in advance, likely two. We called six days before and they were full, so we showed up an hour before opening and managed to get in with the first wave.

If you are a Sushi lover and wanted to taste what is should taste like, try them out and you then will be consciously aware of the authentic taste and the passion that they put into preparing your food. You need to make reservation, there is always a line. It is worth it!

Notes: Its Pricy, Its good, its a lot of food, but its not extraordinary. Its good though; probably ones of Seattles' best. Chef Shiro is a comedian. Service is great, they keep coming by to refill your water.

Words can hardly capture and describe the incredible experience of visiting Sushi Kashiba.
I am sure there are thousands of other reviews that you could be reading, so I'll just give my personal suggestions if you plan on going.
First off, you may want to read a bit about the founder and one of the current chefs, Shiro Kashiba, and his significance in Seattle. Learning about the history of the restaurant provides some more background about why your meal is so special!
A second suggestion would be to order one of the pre-selected mixes on the menu. At the time of my visit, there were a few of these located at the top of the menu and ranged between $75 and $100 each. I got one called the "Seattle" and a friend ordered the "Peak," but there was also a "Chef's Choice" option available. You'll probably want one of these per person.
Some people enjoy visiting Sushi Kashiba and experiencing it like a new adventure, so I'll warn you that this paragraph may contain "potential spoilers," so to say. Feel free to skip to the next paragraph, if you'd like. The way the pre-selected mixtures work is that a few dishes will be served to you over 4 courses, starting with a "soup and salad" and ending with miso soup and a small desert. I'm not entirely sure what the "soup" was made of and unfortunately didn't ask, but it was a clear, gelatinous substance with little flavor. The salad was a bit small, but enjoyable and contained some very good vegetables. After the first course, there are two courses that come with many different pieces of sushi; one of each kind in the list when ordering. To finish off the meal, a small bowl of miso and a couple bites of an egg-based desert.
My final and perhaps most strongly suggested recommendation is to eat the food as it was meant to be eaten. By this, I mean don't add/remove Wasabi or sauces; don't turn down something based on its looks or description. Instead, just sort of tell yourself, "Okay, that was a bit weird, but still new and different. Let me try the next thing!" I personally don't like Wasabi (at all) and can't stand tomatoes, eggplant, or sea urchin. However, the vegetables were great and the Wasabi here is excellent and actually Wasabi... many places nowadays use a dyed horseradish to simulate it, but Kashiba's Wasabi is fantastic. Additionally, the hot spiciness is minimal and goes away after a couple of seconds. As for the sea urchin, well... let's just say I've never met anyone who actually likes it. It's still fun to be able to say you've tried it, though!
Ultimately, until I manage to visit Japan, Sushi Kashiba will remain as my favorite sushi restaurant and certainly one of my most favorable food experiences. Go ahead and enjoy some fabulous sushi!

Omakase ordered through tock from sushi kashiba! You park and call them, and they'll bring your order out to you! They pack it with a couple small ice packs which I thought was very thoughtful! The omakase was pretty tasty. It's pretty standard and probably what you would expect, nothing super fancy or unique. The fish was high quality and the fatty tuna was suuuuuper fatty! They recommend you consume your meal within an hour of pick up, and I think part of the reason is because of that tuna! Overall I enjoyed it, but my preferred sushi in Seattle is still Kisaku for casual, and Wataru for something a little fancier

Fantastically fresh seafood served in an traditional yet unique manner. Attentive staff that keeps your cup filled and your plate full. I ate the omakase and was happy with everything I was served, although I was still hungry. Their omakase was more of a typical prefixed multi course meal rather than the omakase I'm used to where you are served until you say stop. Best fish in Seattle? Probably.?.
