They just opened 5 months ago so not a lot of reviews yet. But don’t let that deter you. The atmosphere is nice. The octopus is just okay but the ceviche and duck rice are amazing. I’m so happy to find a good Peruvian spot in Seattle. Definitely come back

I just heard about this place from a coworker and it was amazing. The duck and rice was exceptional. The duck just fell off the bone and rich with lots of flavor. The appetizers we got were good as well though I can’t remember the names. If you want a taste of Peru, this is the place in Seattle.

Really great addition to Pioneer Square - lovely staff, good food. It’s a bit of a hybrid Peruvian x Japanese menu which seems odd but totally works. We had the coconut shrimp, a piece of the tuna sushi, the shrimp fried rice & an order of lomo saltado. All delicious and would order again - my only minor quibble was they had several very delicious hot sauces which ended up being $2 a pop when the bill came but I digress as they were both great sauces but maybe think about just making those available for free upon request.

Me and my bestie Peruvian friend finally got to try this place out! I trust his word and he said this might be the best authentic best Peruvian place in Washington. The decor, music and food screams authentic! If you want great Peruvian food this is the place to go!

Senor Carbon had good food and a quiet, comfortable atmosphere. The service was quick and polite. We ordered seared octopus and the pork belly sandwhich. My girlfriend shared that the octopus was among the best she had ever had. I personally don't enjoy seafood but this was well prepared and seasoned without a hint of fishiness. The pork belly sandwhich was well prepared and tasty. The pork had a nice crispy outside but soft juicy interior. The toppings also made for a good flavor combination that felt/tasted refreshing and was not overwhelmed by the pork belly.

The food here was really delicious, it’s a fusion of Peruvian and Japanese cuisine. We ordered the coconut shrimp, Ceviche de Atun Nikkei, scallop and foie gras nigiri, Lomo Saltado and Arroz con Pato.
Everything we ordered tasted good but we really like the Ceviche, Nigiris and the Lomo Saltado. We were tempted to order another round of the nigiris.
I would highly recommend this place if you want to try some delicious food. Also their staff were super friendly and helpful. It was my friends Birthday and they came out and sang him happy birthday with a dessert!!

We’re from out of town and was recommended this through some articles. Talking to the very friendly and helpful staff we learned that this restaurant was opened 5 months ago. The food is Peruvian with a fusion of Japanese inspiration. My husband and I ordered the Ceviche Classico featuring rock cod sashimi, calamari which came with two types of Peruvian corn. It was super refreshing and the cod was delicious and fresh. We also ordered the octopus and it was the most tender octopus I’ve ever had, cooked in a light savory sauce. The seafood rice was nicely done. I would whole heartedly recommend this place.

First time tasting Peruvian food and we were not disappointed. The food seems like a mix of Spanish, Japanese and even Thai with the acidic dressing on some of the salads.
The Ceviche Clasico Carretillero was tangy and refreshing.
Yuca y Platano frito is a kinda banana fritter. Lomo Saltado - steak was nicely cooked. Arroz con Pato - Peking duck on rice was very tasty and delicious. Pulpo a la Parrilla - the octopus was tenderly made. Arroz con Mariscos reminded us of the Paella. Overall good quality food worth coming back.

This Peruvian Japanese place is amazing. If you love cocktail, Pisco Sour at Señor Carbón is a must try. Well crafted - earthy, sweet and tart. Achevichado roll (panko shrimp and avocado) is a very unique zesty sushi roll and it tastes so good. I also enjoy Pulpo a la Parrilla (grilled octopus) - very tender and flavorful. Food is served very quick and really great service.

Lomo Saltado was cooked exactly to medium rare and had excellent flavor. The ceviche was also very tasty and authentically Peruvian. Pisco sour was amazing. The egg white foam was airy and delicious. I’m looking forward to trying more dishes.

We stopped here on a whim because we had to get a bite to eat before we had a museum reservation. We were skeptical at first but the staff greeted us very warmly and seated us right away. We ordered the ceviche to start and the loml saltado. Both were packed with flavor! The drinks were strong, too. Great service, great food, and we were out of there quickly because of attentive staff. We will be back any time we have business near pioneer square!

Fantastic Nikkei cuisine and very friendly and helpful service - translating the menu and helping our table understand the dishes and make recommendations, so helpful! Everything we tasted was delicious and tasted fresh and unique (there were 7 other dishes not pictured). Will definitely be back!

My husband found this place driving home from work and so went before the soccer game and let me just say…. It’s fantastic! So many wonderful flavors and foods to be delighted with! I know that some people might be a little hesitant to eat here just because it’s next to the 7-Eleven where a lot of riffraff hangs out but typically they’re out-of-the-way by the time the shop opens. Everything we ate was divine: Langostinos A Lovee Macho, Acevichado Roll and Lomo Saltado. The staff is super nice too you won’t be dissatisfied!

Oooooh weeeee the excitement at finding authentic Peruvian food outside of Peru. The chicha morada was so refreshing. The chifles and aji were awesome, the spiciness was very strong but just how we like it. Pan con chicharrón was served to perfection. We were definitely full otherwise we would have ordered the duck too!
Service was great, quick and with a smile. It’s not high end decor but comfortable and clean. Would definitely return.

This is a really really good peruvian food restaurant. I wish we could have some like that in Vancouver. A little bit pricey honestly. In regards to the place, it has a good service and nice environment. I'd only change the very heavy and uncomfortable chairs.

I really enjoyed the food (lomo saltado) and drink (chicha morada) I ordered. My Husband is Peruvian and is a chef, and we both enjoyed the exquisite taste and fresh ingredients which I feel are signature of food from Peru! Very friendly waiter and definitely will return again when I venture from Canada :-)

Wow! This place has some of the best Peruvian food I’ve had anywhere in the world outside of Peru itself. We had Seco de Cordero, Ceviche Tradicional, Arroz con Mariscos and Parihuela. We all shared, and we all felt the food was delicious, fresh, great quality and well served. We also were very impressed by the high level of service by the staff and management. The atmosphere is also pleasant, classy and very representative of Peruvian art and culture. All around this place checked all the marks for us. We came to Seattle to visit from Portland where we have our own legendary Peruvian restaurant called Andina. To be absolutely honest, this place matches the high level one would expect from a place like Andina; when Andina was that good. So watch out Andina! This place can give you a run for your place in the Pacific Northwest! If you’re looking for fantastic exotic food in Seattle that would blow your socks off, look no further, this is it.

We visited on a Sunday night and were lucky to get a table for four before the Sounders match without a reservation. This was our first visit to this minority owned small business, and the service and food didn't disappoint. Our food was served very quickly after ordering. The food was beautifully presented and colorful. The seco de cordero was tender and fell off the bone. The ceviche (ahi) was fresh and bright with a citrusy sauce, accompanied by Peruvian sides in a variety of textures and colors. The shredded chicken in aji amarillo was creamy and homemade tasting. Each dish was delicious and filling. We also enjoyed their Pisto Sour cocktails from their bar to make for a festive evening! 100% recommend for an authentic, Peruvian meal with super friendly service. And you may be surprised that Peruvian food includes sushi due to their Japanese immigrant population! Sundays are free street parking in Seattle.

Best Peruvian food in the US!
I travel all over the world for work and eat out at a lot so its fair to say I have an extensive amount of experience in many cuisines.
When we arrived, the server Ayni, brought us to our table and we were immediately greeted by Joe and Imelda, the owners of this lovely place.
The mahogany table was set as you'd expect for a 5 star restaurant, but the atmosphere allowed you to loosen your tie and calmly enjoy the ambiance speckled with art, a Peruvian flag and even a 4 foot stuffed alpaca!
My wife, Peruvian friend, and I have shared dinners at Peruvian restaurants in other states, Lima, Peru and even Japan. Yet, we still allowed Ayni to give us recommendations and he did not disappoint! For starters, We ordered Causa de Pollo, Longostinos al Coco, Nigiri Concha Limeño, and a very classic Peruvian item, (but must be secretly ordered off menu) Leche de Tigre.
The main course was the Acevichado Roll, Seco de Cordero, and washed it down with a glass of Chicha Morado and their trademark drink Pisco Sour.
My favorite was the Acevichado Roll because the blend of Peruvian flavors with a high quality sushi roll made even my Japanese wife impressed! The scallop nigiri (Nigiri Concha Limeño) was a close second but beyond that, nothing really else was very far off. Everything else had such a carefully crafted presentation and fresh, savory taste.
If you are questioning where to dine out and spend your hard earned dollar, looking for a great place to try something new, or have a casual lunch with purpose, you need not search past this restaurant! Joe and Imelda were incredibly hospitable and Ayni gave us confidence in his recommendations through detail of each delicious item.

The area surrounding is sketch and is easy to miss but...soooo worth the find. Peruvian + Japanese cuisine - literally amazing. Don't be afraid to try something funky and come here. The staff were so friendly and helpful. I tried the Nigiri, ensalada carbón, Causas trio and the drink with guava and egg white - UNREAL.

It was a crave to start trying out South American Cuisines and it starts from Peru. I may not be the best judge for Peruvian food taste. But the ambience was great and so was our waitress Anna. She was friendly and suggested food for us when we made her realize that this was the first time that we trying out Peruvian food.
We went for Causa de pollo for appetizer, and for main course we went for Aji de Pollo and Seco de cordero (lamb curry). We wanted to try out Ceviche but may be next time. Seco de cordero was bit salty and may be all the recipes was typical Peruvian taste but may not be for my tastebuds, so I may lessen one star for being salty.

Hella hungry, there weren't too many items that were low carb so i figured to try this place. Love Peruvian food so why not!
Closest thing on the menu that is low carb was ceviche clasico carretillero. Most of the dishes on the menu had rice and/or potato. Ceviche was pretty delicious consisting of fresh rockfish marinated in tiger milk. This dish also came with sweet potato, white corn, Andean corn, fried calamari and sliced onions. Delicious, fresh and tangy.
The anticucho de salmon prepared in skewers were perfectly grilled and tasty. Nice cut of fish. Not too lean and had some good salmon fat. Served with a side of aji del casa and grilled veggies, a good healthy option.
Service here is average.
This restaurant does have some character. Worth a visit if you enjoy Peruvian cuisine.

A hidden gem in Pioneer Square 💎 but not for long. I enjoyed the food very much! The flavors were true to my own experience in Peru. But each dish had one or two elegant tweaks (like the purple olive sauce on the Aji de Gallina). There is clearly a lot of love at this restaurant. A saw a lot of regulars come in to enjoy a relaxing meal and catch up with their countrymen in Spanish. I would definitely recommend Senor Carbon to someone who is unfamiliar with Peruvian cuisine 🇵🇪 and is ready for a new experience.
One small thing - I noticed that their ceviche was not served with chifles (plantain chips). I thought this was the common way in Peru but perhaps it’s not the case in every region!

We read about Señor Carbon and thought we’d give it a try. It’s right between a 7-11 and a parking lot on 1st, and we’re glad we found it. We had an appetizer if fried plantains,and drank chicha morada (give it a try!). The main course was lomo saltado, and I love it. The meat was tender and juicy and flavored the fries with their sauce. I asked them to put the meat on top of the fries. I recommend it that way. We’ll have to come back to try the lamb stew, which they say is even better.

The best traditional cebiche I have eaten in a restaurant in America. Made like Peruvians like it. Beautifully presented with canchita (Peruvian roasted corn), fried calamari and fresh corn. Salted just enough, perfect acidity… just awesome.
The arroz con pato was outstanding. Well seasoned and tasty. The octopus was perfectly cooked. Soft and tender. Great char and delicious taste of huacatay, a Peruvian mint.
Overall, extraordinary food and reasonably priced. By the way… their pisco sours are excellent. Love the extended happy hours!

The first time I had a real pisco sour was in Miami. I've been chasing that experience for a long time and this place delivered! The civeche mixto was everything I hoped it would be and their steak was ridiculous! I don't know why there aren't more Peruvian restaurants. And under appreciated cuisine to be sure. I will definitely try to come back here the next time I'm in Seattle!

Riquisimo! The flavors are all there and it was delicious. I tried the classic "Lomo Saltado", which is a standard peruvian dish and it hit the mark. My partner tried the "Mariscos al curry con ajies Peruanos" and she loved it. The curry had coconut milk and she really enjoyed it. Will definitely need to come back to try more.

My first time to a Peruvian restaurant and I was blown away by the food at Senor Carbon ! I was invited by 2 friends that are from Peru and this restaurant is their favorite....and I honestly can't stop thinking about the amazing food-fresh,delicious and unique food with so many choices on the menu that I can't wait to go back to try more....So my friends did the ordering so I'm not sure the names of 2 of the dishes -appetizers I believe- but we each got ceviche as our main dish and I was impressed and full halfway through-so I took the rest home and ate it a couple hours later and I was pleased to discover that every bite was still fresh and tasty !(of my Ceviche and some of our 2nd appetizer we all hadnt touched because we were so full.)The spot is easy to find‐located in Pioneer Square right on the corner and the staff is friendly,knowledgeable and attentive and will make you feel right at home...If you are looking for authentic Peruvian food I would go to Senor Carbon....

Our first time here in this restaurant and I was very excited as we are from NY and There are A lot of Peruvian cuisine Restaurant!!..my parents owns a Peruvian Restaurant in NY as well and I love tasting other restaurants!. The food is expensive and small portions but it in Seatle so, I expected expensive food here hehe!...Our server young girl was nice and very professional. There no Alfajores:( ..The Lomo Saltado my husband said the meat was very juicy and delicious, the mojito the young man made a delicious mojito,the causa de Pollo was my favorite, the haucaina* with shrimp was ok (the shrimp were too salty) the pasta with Haucaina was very good and it had a kick of spicy!..This Peruvian Restaurant would be perfect for the "American Peruvian people " who grew up in the USA and do not know the true flavor of Peruvian dishes!.we had a nice time for our Mothers Day lunch ! This Restaurant is a "Japanese Peruvian which had sushi as well.Thank you for the rose that gesture was very lovely!.

We ordered a bunch of different things and EVERYTHING was great. This is one of the best places in Pioneer Square. There are more than a few restaurants in the area that just serve really greasy tourist food, but Senor Carbon was perfect. The drinks had the right balance of flavor (I had the Pisco Sour & also tasted a drink with passion fruit that was really good), and the food was amazing. I tried the coconut shrimp, fried plantain, pork sandwich, octopus, and a sushi roll. Every single one tasted great. Plus there was almost no wait to get the food once we ordered. I’ll definitely be going back often.

I never liked Peruvian “fusion” cuisine because Peruvian food is simple and tasty and to make it fuse with other tastes spoils the basic dishes. Señor Carbón was the exception because the menu offers the basic dishes and their “fusion” ones were gastronomic works of art.
Chef Joe Testa has done a phenomenal job with his restaurant in terms of the ambience, menu, food quality and freshness, service and cleanliness. We were a party of six, three of us native Peruvians, that tried many of the basic dishes like ceviche clásico, lomo saltado, causa de pollo and arroz con mariscos. Each an amazing creation. We also tried some of the ”fusion” dishes like crunchy causa, anticuchos de salmón and grilled pulpo - each as amazing as the basic dishes. The arroz chaufa was plain outstanding topped with a shrimp egg foo yong like omelette.
For dessert we tried the cheesecake, crema volteada and tiramisu - each top notch! Service was expeditious. The liquor menu looks great although we didn’t order any. The typical Peruvian drink chicha morada tasted to me like made from scratch. The menu offers a variety of sushi and nagiri we will need to try next time.
The dishes were on the pricey side but definitely worth it given the quality and presentation of the food.
To me the condition of a restaurant’s restroom reflects on the kitchen’s cleanliness and the degree to which a chef wants to maintain the level of his/her art. I found the restroom impeccably clean and tastefully decorated.
We all agreed we are coming back again to try some more of the menu items. This is a restaurant not to miss!

Señor Carbón is a must when in the area. I forgot to take pictures for all you review viewers. I was in Peru this summer and it brought me nostalgia. I ordered the arroz con mariscos and it was delicious. My wife ordered Pulpo a la parrilla (Grilled octopus) and guess what, she loved it. What a gem of a restaurant in Seattle. I will definitely keep this restaurant on my Google Maps Favorites.

Three of us tried four dishes as well as the chicha morado (similar to Jamaica but better imho) and a passion fruit drink. Everything was great. We had steak, a sushi roll and a grilled octopus. Easily the best octopus I've ever had. Oh and the croquette appetizer was amazing!
We will return to try more of the menu and the drinks. So good!

Ceviche!
So many things on the menu we wanted to try. The classic ceviche sounded good but wasn't a top contender, but the (very kind) waiter strongly suggested it, and I am so glad we listened. Just amazing. Hands down the best ceviche we've ever had and the star of the meal.

This was so good! Got the yucca and plantain appetizer, Lomo saltodo, pisco sour, and chicha morada drink. All stellar! Probably the best Peruvian I've had in the US so far. The food presentation was also good and the restaurant had a nice atmosphere.

Brave Pioneer Square for this food! The lamb in the Seco de Cordero was fall off the bone tender and delicious. I've never drunk chicha morada but I am glad I tried it! Dined in for lunch. This place is on 1st Cherry and it can be intimidating, but please ignore the loiterers. The food is absolutely worth it!

This inviting small restaurant in Pioneer Square is a delight and a unique experience in Seattle. Peruvian sushi?!? Yes, please! The Tiradito Roll and Nigiri Norteno were delicious twists on traditional maki rolls and nigiri - no soy sauce and wasabi; instead, Peruvian sauces with just the right level of spice and tang topped the fresh and beautifully-presented dishes. And the Causa Crocante Nikkei is a fantastic starter unlike anything I've tried before. The (non-alcoholic) Chicha Morada is a sweet and spicy drink perfectly paired for this food, and the traditional Pisco Sour did not disappoint. And, we tried two of the three desserts on the menu, and both were absolutely delicious. Service was incredibly friendly and speedy, and we felt very well taken care of. My only suggestion for improvement would be a greater attention to checking vaccination cards upon arrival. Everything else was perfect! We'll definitely be back soon to try more of the creative menu items!

The best Peruvian food in Washington. We had been actively looking for a good Peruvian restaurant, and we are so happy we found it. We’ve tried all the places that serve Peruvian food in WA, and this is the best one. We had the trio de causas and the causa frita as appetizers. The potato was on point. We also had the lomo saltado, pulpo a la parrilla, seco de cordero, arroz con pato, tiradito roll, ceviche mixto, pasta huancaina con langostinos. For dessert we ordered the tarta de queso and the crema volteada. Everything was DELICIOUS. The customer service was amazing. Oscar made us feel welcomed; we’ll definitely go back soon, very soon.

After months of eating their pop ups we finally went to their new restaurant and it was just perfect. Their "trio de causas fritas" (fried potato balls with chicken, tuna, and shrimp) and their basque cheesecake were the highlights of the meal for me. Easily the best cheesecake I've ever had.

First of all, WOW!!. We live in Portland, and until last Friday I was under the assumption that there was no good Peruvian food in Portland or Seatlle, Sr. Carbon proved me way wrong, This was the high point of our little visit to Seattle, we were greeted by Hugo, great guy and great advisor on what to eat (I wanted to eat the whole menu), First of all, the Pisco Sours were perfect, I felt back home, right in front on my favorite beach spot in Lima, we ordered the Nikkei Causa, Maki Acebichado, to share, they were perfect great bold delicious flavors, My wife got the Arroz con Mariscos, and I had the Lomo Saltado, I am just dreaming about them right now, if you live or visit Seattle, it is a most, right in the heart of the city, and our host Hugo was just the best, It is no joke when I said I'll be back in Seattle just to try more dishes and more Pisco, Congratulations Señor Carbon, Y SALUD!!!

In general, the attention was quite good, the portions of the dishes are a little small but the taste is more than well achieved, therefore it compensates. Rich mixed ceviche I recommend serving it accompanied by toasted bread so you can take advantage of its juice and the tiradito sauce, which was very tasty.

After spending time away from your land, you start to miss the dressing, the taste of a good ceviche and the chicha morada. As a Peruvian I am glad to have finally found a place where I have everything, from the warm and familiar atmosphere to the attention and seasoning. My family and I went there for lunch a few days ago and we ordered the essential ceviche, rolls with acevichado, an ají de gallina, we accompanied it with chicha morada and a delicious pisco sour for me. I must mention that we ordered several dishes to share and they were all amazing options. Now I have no hesitation in recommending it because it is our favorite restaurant.

Trying Peruvian and Japanese food at the same time is a very fresh experience. One of the owners is Japanese, and he also has a soft spot for Chinese food recipes. Soups, stews, sushi, and salmon can be seen everywhere.
