Def a different experience than what I was expecting. Overall, it was an ok experience. Everything is self-order, self-pick up. Don't expect a server. Order via QR code and you'll receive a text when your food is ready to pick up at the kitchen bar top. Order your drinks at the bar and leave an open tab if you plan to have a few. Good beer selection with a limited liquor selection. We ordered a Kale Salad, Tater Tots, The Dodger and The Pepperoni Pies. The salad was delish!! Tots were slightly over cooked but still good. Pizza crust def is thick and crispy. For the price, I wasn't blown away by the pies as I expected a bit more toppings and flavor. Maybe it felt out of balance with the crust to topping ratio. I'll try again with a different pizza menu in a few months. More to come!

Was the food expensive? Yes. Was it delicious? Amazing! Kōbo brought a nice alternative to the pizza scene in Cap Hill with the unique flavors and take on Detroit pizza.
The only thing keeping me from giving this 5 stars overall is I don't think the quality gains exceed Little Caesar's quality enough to warrant such a premium price

What a cool spot to get Pizza in capitol hill! I’m sad I came at a pop up time where they didn’t have their original menu but nevertheless the food was good. Their garlic bread was yummy! I liked the white pizza a bit more than their pepperoni. I’d say 1 pizza and an appetizer filled 3 people. You order off your phone or kiosk and they text you when it’s ready. Ambiance is inside a brewery so there’s a lot going on and to do. I’d come back.

It was really good, chewy bread. We got the Ginny and tots. Really good flavors all around. Tots were well seasoned and crunchy.
We just had a problem with the lack of toppings. 2 of the 6 pieces were basically just bread. For a $20 pizza? Hopefully they do better

I was very excited to try this place since I love Detroit style pizza (and chef Shota), but found myself underwhelmed and disappointed.
The addition of rice flour to the dough makes it thick and substantial, but it didn't seem like an improvement on traditional flour based thick crust pizza. The underside of the pizza was inconsistently burnt, some edges more burnt than others. Unfortunately burnt rice/wheat flour combo makes for a very tough bite. We ended up only eating the inner portions of each piece. The toppings were delicious, if only it were on a traditional crust.
Although I appreciate the creativity chef Shota brings to the pizza scene, this one feels like a miss. Personally, I miss chef Shota's upscale dining, which is where I find he most shines.
Ps - For those looking for Detroit style pizza in Seattle, I strongly recommend trying Moto, which has a delicious fluffy crust and perfectly cooked edges, overflowing with rich sauce.

I was recommended by a foodie friend about this place, and the mochi pizza just sounds so tempting... A group of us visited the restaurant on a Sunday afternoon. It is located in the Redhook Brewlab, which has many open seatings in front of the store. It operates like a food court- place orders at the counter or scanning QR code, get your own utensils and water, get the order from the counter when it's ready and clean up afterward.
We ordered Umami tots, napa cabbage salad, and tsukemono (pickle plate) to share. All of them are really good, especially the salad. The tots are crispy and fresh. I really enjoy the salad, the vegetable is fresh and the dressing is spot on! definitely try the salad! also, it is a big portion, we 8 people tried our best to finish the whole bowl!; I am not a big fan of the pickle plate but all my friends enjoyed that!
For pizza, we ordered: The Ginny, The Dodger, The Hot Neighbor and The Maverick. I like all of them and personally like the hot neighbor the best. The mochi flour makes the taste very unique and all our pizzas came out hot and fresh! There is a lot of dough in the pizza so it's very filling, I ate two and a half pieces and I was so full!
I will definitely come back and recommend here to my friends!

Went to this place after work with my coworkers for drinks and ordered two pizzas to share among 5 people. I had seen this place on tiktok, and was super happy when my coworkers were willing to indulge me in trying this place out!
This place did not disappoint! Though I think the pricing is a little steep for the size, the taste really hits the spot. Definitely appreciate the creativity and delicious spin on Detroit style pizza.
We went with "The Ginny" since one of my coworkers who is from Detroit said that is the closest one to the "real deal". And "The Dodger" was just one that really attracted all of us. Both of them had the perfect crispy crust and flavor. "The Ginny" was more standard, and not super exciting. "The Dodger" on the other hand is a perfect combination of Asian influences and Detroit style pizza. The teriyaki was perfectly sweet and salty. I think the prices were a little high, and it would be nice if they put on more toppings. Overall, the place is a good spot for getting food to go along with your drinks! Would recommend.

People giving this less than 5 stars are whack. It’s SO GOOD. I don’t want anything other than mochi, yeast-ey pizza dough from now on. It’s so light and delicious, and the cheesy crust really makes it. Anybody who is on here saying it didn’t have enough toppings probably only gets their pizza from poopy places like Pizza Hut or something where the toppings are rubbery and overwhelming. This is a wholeeeeee different ballgame and there are PLENTY of toppings. And get the seaweed ranch. Omg.
Also, yeah it might look kinda small at first, but it’s extremely filling so yes, worth the money aaaaaabsolutely.
You’ve gotta appreciate pizza to know good pizza. This is good pizza.

Pizza was pretty good, super filling since it's so "doughy," but the real star of our meal was the broccoli!. Do yourself a favor and GET THE BROCCOLI.. It was so good it's what will bring me back! (also, my kid devoured the Kale Caesar).

We love coming to Kobo for a delicious meal. The mochi flour in the dough and the cheese around the edges make for a delicious crust. The Dodger, the Hot Neighbor, the Pepperoni (with garlic honey!) and the Maverick were all amazing. The tempura salt and pepper broccoli is always perfectly crisp. Ordering is streamlined with the touchscreen menus, which have photos of the dishes. Since this is inside the Redhook Brewlab, it's easy to pick up a beer while waiting for your food, too. Definitely recommend!

Ordered The Maverick, crispy broccoli, and zeppoles. Everything was SO good. That mochi crust is to die for and all the flavors were unique and tasty. Finished this between two people but I was completely stuffed.
Love that it’s dog-friendly, the area and ambience are lovely, and the staff was friendly.

I so wanted to love this, and maybe we just had a one-off underdone pizza, but it wasn't anything I would go back for. We had the Hot Neighbor and, while the toppings were tasty, the dough was so pale, almost uncooked, definitely undercooked for my taste. When I've seen pictures of Detroit pizzas - which I thought this was a riff on - though thick and soft, the edges look crisp and dark brown with brown color on the bottom. The bottom of ours was off-white at best. Maybe we'll try again someday but with all the pizza places in Capitol Hill, it will likely be awhile.

The pizza is very good but they lose two stars for being inflexible about substitutions and omissions of toppings. Also the miso cheese sauce sounds more interesting than it is.

The thick crust is good. But the “Dodger”which references okonomiyaki was a bit of a disappointment. It has no pork belly, no Okonomi sauce and no katsuobushi. What’s up with that?
