Some of these organic companies claim they know the name of the pig who made the sausage. Salt Blade makes sure the pig's family is taken care of and the piglets get an education. They even contract a spider or two to spin encouraging messages over the pen. I've tried most of the product (the venison version comes from a USDA managed preserve in Hawaii and is a must try) since Bob was selling it out of a suitcase and it has consistently been delicious high quality meat. It works in many forms: as a Slim Jim, thinly cut for parties, paired with cheese, as a backpacking companion, on sandwiches, in sauces, and as a pizza topping. Mostly I just unwrap the little guy and take a bit while using it for something else, similar to how a kid eats cookie dough. I like it on a dish. I like it instead of fish. I like it here and there. I like it everywhere. Hold the eggs.

This is an amazing product. I will order this again! We had 6 different types on our charcuterie tray with different wines. We then had leftovers for breakfast. It was a perfect for a wonderful weekend celebration!
