WOW!!! I am a croissant connoisseur and their buttered croissants and Nutella croissants are absolutely out of this WORLD!!! And then they have their loaves of sourdough bread. OH MY GOODNESS!!! You can literally eat this bread untoasted and unbuttered and be in bakery Heaven!!! Then you have the staff and they are SUPER POLITE!!! 10 STARS ALL THE WAY!!! We WILL be back!!! :-)
Best bread ever! Every other month I drive 50 miles round trip and stock up. That way I always have Gaston bread in the freezer!
The croissants were not good, tasted kind of stale and didn’t have that crispy layered effect that a group croissant should have. But the Marionberry scone was delicious!!
I'm sad to see such discouraging ratings below. I can tell you as a former employee the pastry is baked late at night. I'm sure if you would like a tour they would be happy to give you one so you can see how things work. Mathieu who is the owner has a heart of gold and is amazing.
We love this bakery! Love the floor that is freshly milled there. Best flour I've used in a long time. We will continue to come back for the bread and flour.

Their pastries were good, they're all made out of the same croissant dough, including the "cinnamon roll" it's just in different shapes and fillings.

My favorite local bakery in Boise. They also usually have a stall at the farmer's market. Love the ham and swiss croissant (or any of the stuffed croissants). Cannot recommend more highly. If you don't have time to stop by, they also stock a number of coffee shops in the valley.
Pretty solid pastry selection, definitely a quick go-to for me if I want to take treats into the office for people. The croissants are IMO better than any others made in Boise. I tend to go for the more traditional French pastries, but the Danish are fantastic and I am told the cinnamon rolls and bear claws are both amazing.
I don't stop in as much as I should as I feel they keep a little weird hours for a bakery (don't open until 9am).
I really miss Le Cafe de Paris. Their duck egg omelets or the Croque Madame, I can still taste. I think I will stop on the way to work on Friday.
Nice place for taking out different types of bread, croissants, scones... there is no seating area inside just a bench outside ! Very friendly staff! I had an olive loaf and an almond croissant that were delicious! It is recommended!!!
I got a pick up order today of some mixed pastries including Marion Berry scones , Apple bear claws and baguettes. My husband I thought the pastries were the best we ever had! Really tender pastry, excellent fruit fillings, very reasonable prices for the quality. We'll be going back again for more soon!
I'm never buying "regular" flour from the store again! We're on our 2nd 20lb bag of house milled flour from Gaston's and are obsessed with its incredible quality. Hubby and I are both avid bakers and using this flour in our go-to recipes has elevated them and been a game changer. Occasionally we will indulge in a croissant or 4 made by the bakery and oh my goodness.... Perfection. We love supporting a locally owned bakery!
I lived Germany for 3 years and they are known for their bread. This bakery took me right back and can hold it's own! The ham swiss croissant is my favorite! I am so glad I found this place! Best bakery in Boise
Just tried the rye bread and it's incredible. Have had the croissant loaf in the past and it's amazing, too. Organic, top-notch bakery.

Excellent bread, especially country style, sourdough, mediterranean style with olives, also pastries like ham and swiss etc. The service is very friendly and efficient. They sell good big bags of different kinds of flour too. They do curb side pickup and free next day delivery.
We love to come get croissants from this place! My favorite are the almond and my boyfriends are the ham and swiss. They're delicious. I can appreciate the huge window into the bakery where you can watch the kitchen. It's beautiful in here. Albertsons sells some of their breads in their local section. We love everything from here. It's delicious. Definitely recommend to anybody wanting fresh baked breads.
Matthieu has a great shop. He's been in Boise for several years now and is a fabulous baker!
Not the biggest selection to choose from but what we did get was very good and the young gal behind the counter was very nice and friendly
Writing this is hard because I feel like I'm giving up a secret treasure to the world. But you absolutely must try their pastries, in particular their kouign amann. I bought one on a whim to try something new and I've been hooked ever since. They're buttery and sweet, with a crust of caramelized sugar on the outside. I'd take one over a donut any day, and I hope they never stop making them.
During a crisis they know how to deliver. If you are a baker I highly recommend going and getting the flour for baking, it is milled fresh! They are still taking orders and have curbside pick up! Please support local business, if you do not bake they will and the products they make are amazing~ !
our favorite bakery. I like the multi grain, my wife likes the country white. olive loaf is fun for a change. kouign Aman is great for a weekend treat!
Amazing bakery. One of the few local places you can get a genuine French bread. They make plenty of delicious crunchy loafs as well as croissants and pain au chocolat for a fun morning pop in.
Man oh man what wonderful bread. The country and there sourdough are off the hook. Plus the pastries are so buttery. Thank God I don't live to close to them, some serious weight gain would be going on. The family just loves there bread. A big plus for Boise that is for sure.

Storefront is small and tucked out of the way, but functional. No coffee or other beverage services at storefront so plan accordingly.

WeActually my and my wife's first experience with Gaston's fare was yesterday when we stopped at their stand at the Meridian Main Street Market. OMG What wonderful bread and croisants!
We love artisan breads and were extremely pleased with Gaston's products. The baugettes, the olive chibata, the ham and cheese and chicolate croisants all so yummy!

The most flaky croissant I have found in Boise! The ham and swiss was amazing! The raspberry in the Danish tastes liked it was picked that morning. Absolutely outstanding!
Simply the best bread I've had in a while! They bake delicious "multi-grain bread," which I highly recommend. Most of their inventory is available in Boise, Idaho, at the Boise Co-Op.

Wild bills restaurant in Garden Valley also known as Crouch Idaho uses this bread from this bakery it’s amazing we only go to wild bills because of the sourdough and the olive loaf they use :)

Great products but go early if you are after a full selection. Was there by 8:45am and most of display was gone, no rye bread either.
